That's a good idea, I think I will try both ways, use it to mould one and cook it on a seperate tray and leave one in the bread tray.

I will post some pics next week as I already have 2 more normal sized ones in the freezer from when I cooked 3 at once last week. ;)

Don't want to have one every week or we may get sick of them.

    :)
ah, I thought it was you I got the idea of doing 3 at a time from :)
I made 3 on Saturday & now there's only a tiny scrap of one left in the fridge!

there's usually only me & my (adult) son, & we had it for tea 2 nights running :D
but my daughter & her partner were in town for a wedding & my Ex-husband showed up too, so they all wanted to try it

I think next time the extra 2 must go in the freezer as soon as they're cold enough!

looking forward to seeing your minis done two ways :)

Yes me :D I also didn't add sage because I bought parsley by mistake, oops. (I didn't add the parsley btw :o)

My OH and son said they were really nice, OH said they were a bit too meaty but I did use more meat per muffin than the recipe said.

I'm having trouble finding muffins now though. Unless I go to the supermarket I'm pretty much stuck. I found muffins in the co-op but they had sugar in the ingredients so I didn't buy them :o

Thanks... I think next time I will miss out the sugar completely! ;)

I also think I will buy the 'very' large eggs next time, I used large ones on Saturday and they could have done with being that little bit thicker - like the ones in Maccie D's.

    hi Melonade,
are you avoiding sugar? if not, you'd have been fine with the Co-op ones :)

I think you'll find most English muffins have sugar of some sort in them, but not very much, it's just to help the dough rise

& it's often disguised in the ingredients list, anything ending in -ose is likely to be a sugar

I put brown sugar in my sausage patties but I reduced the amount, I used 1kg of pork mince and only added 2 teaspoons of sugar.

I'm also going to reduce the amount of sugar in the Chocolate Chip Cookies next time, I made them last night and they're lovely but very sweet.

Ahh ok :o I'm not avoiding sugar so I'll pick some up next time I wander past. I can't remember exactly but I'm sure the suager was pretty high on the list of ingredients... which is what put me off. I might be wrong though, I was being mithered by my son at the time. I've bought some sage now so I'm looking forward to giving them another go :T

great, you won't have to wait for a supermarket trip now :)

I've got a pack of Lidl muffins here & they have Dextrose in them, listed 8th of 17 (17!) ingredients, or 5th if you lump the different wheat products together instead of listing them separately
  • I've got a week off work so feel able to do some more from the book.

I'm attempting a chicken doner kebab for us tonight with naan bread and kebab sauce - chicken marinading, sauce in fridge and naan proving as we speak - yum. For DS I'm going to do chicken nuggets. He's 13 but doesn't do spicy stuff at all so nuggets it is. I made southern fried chicken last week. Although nice, it didn't taste like KFC I didn't think. It need more of something (though don't know what)

Got pork mince too so going to try the breakfast sausage. Thanks for the heads up on the sugar. I don't actually like sage as a herb but I'll give it a bash.

    I've been Money Tipped!
Regarding the sugar in the sausage patties.

I found that they were quite sweet if you eat one without the muffin, egg, cheese, but tasted fine in the muffin iteself.

Can you tell I was a bit eager to test them, I couldn't wait to put the thing on the muffin!

I did make a batch of 17 so I did have some to spare.

I made the barbecue honey sauce for chicken wings last night, I also put it over spare ribs.

It went down a treat, it was very delicious, however I would recommend putting a liner or something under the food as the sauce has welded itself on to the pans I cooked the meat in.

    Tinfoil would work also.

Empty tuna tin with the bottom taken off?

:T I'm not making egg mcmuffins, but you have just solved my 'what can I use as a cookie cutter so I don't have to buy one' conundrum.

    So thank you!
