Hi I made the fajita mix and this time made 10 x the amount and put it in a container for future use, I halved the hot spices as found it too spicy for my kids. BUT its still a bit hot for them and wondered if there is anything I can add to my mix to cool it down a little ?
Do u think adding a bit of natural yoghurt or the like when i make the fajitas for the kids would cool it down?

Have just spent 15mins making another batch of 'basic curry sauce' will make chicken tikka curry tonight for 3 of us and make a quorn tikka curry for dd who is a veggie. Will make the naan bread and push some sultanas and coconut in them as did that last time and they were scrummy!!
Love the fact will have left over sauce to freeze for future use was gutted i had run out! This time around it didnt seem such a faff,,maybe cos had the stuff and new what to expect!Life happens when you are busy making other plans

I add sour cream to fajitas to cool them down, but natural yoghurt would probably work too.0

I use sour cream too, or greek yogurt
you could also make up another big batch without any hot spices & mix both of them together ... voila, lots (& lots!) of mild Fajita mix0 -
it's quite addictive! I tried Blogspot at first, but couldn't get on with it, then went over to the free Wordpress & it's so much better

Re-discovered this thread! I need your help, I've made the lamb donor before(DELISH!), but need another recipe from the the takeaway secret that's proved really successful, any ideas? There's so many in the book, so cannot decide!

I've got several favourites that I keep coming back to; the chicken satay is easy to cook and tastes delicious, we have it a least a couple of times a month, in fact we had it tonight!
The sweet and sour chicken balls are another favourite, very tasty.
The chicken tikka masala is the only curry we eat now....it's a bit of a faff making up the curry sauce first but it makes enough for 6-7 containers to put in the freezer, then I just take one out each time I make a curry.
This is a brilliant book, I'm going to give it to a couple of people for Christmas with a few basic spices etc to get them started, in a small hamper.

it's foolproof and I usually make a large pile of onion bhajis which my DH demolishes over a couple of days....the trick is not to use too much flour, or it can get a bit "claggy" in the middle, also don't make them too large then they cook right through before they get too burnt on the outside. I reckon they are as good as any I've had from an Indian restaurant! HTH0
