Try Kefta, a Greek version of meatloaf:

    INGREDIENTS:

    1 bunch fresh coriander, chopped
    3 medium onions, finely chopped
1 1/2 pounds ground lamb or beef
    2 teaspoons ground allspice
1 1/2 teaspoons grated lemon zest
    2 teaspoons salt
    1/4 cup butter, softened
    1 medium tomato, sliced
    Breadcrumbs
    1 beaten egg

Preheat the oven to 350 degrees F (175 degrees C).
In a large bowl, mix together the coriander, onions, meat, breadcrumbs, egg, allspice, lemon zest, salt and butter until well blended. Use your hands for best results. Place in a baking dish, or pat into a 2 inch tall round on a baking sheet with sides. Arrange tomato slices on top.
Bake uncovered for 50 minutes in the preheated oven, until no longer pink and the internal temperature has reached at least 160 degrees F (72 degrees C). Serve with pita bread or rice.

I made this last night and it was delicious; I'm going to use the remains in a pie tomorrow.
The ability of skinny old ladies to carry huge loads is phenomenal. An ant can carry one hundred times its own weight, but there is no known limit to the lifting power of the average tiny eighty-year-old Spanish peasant grandmother.

Thanks wigginsmum, I've copied this recipe to use at a later date. It sounds delicious and reminds me of Mousakka so may use some tatties too.

I can't find the bahjis - but naan bread is one of the many items in this great post by Curry Queen which is in our main Recipe Collection.

There's a nice looking recipe for onion bhaji on the BBC site:-

I've been posting a little for the last couple of weeks. I'm still mostly enjoying my gardening leave :)

I've been trying to find simple recipes for lasagne, chilli and other traditional mince recipes. But so far I can't find what I'm looking for by using the search facility.

They have to be simple, quite quick to make (under an hour) and most importantly, cheap!

    Can anyone help?

    Ta,

    Mel

    Spag bol

Dry-fry mince and drain. Fry onions and garlic, add chopped mushrooms. Put mince back in veggie pan with 1 tin chopped tomatoes, a generous squirt of tomato puree, a pinch of mixed herbs and 1/2 - 1 pint stock, depending on how much builk there is. Cook for a further 20 minutes. Serve with spaghetti or cheese, or can be used as a basic lasagne mix.

  • I fry up the mince with no oil in a large pan (no oil because the mince we get isn't very lean!) then once it's all browned one tin of chopped tomatoes, splurge of tomato puree and a little beef stock, then boil over a medium heat to reduce for a while. In a separate pan I fry some chopped onions in marg/butter and add some chopped garlic at the last minute. Meanwhile, boil up some spaghetti or whatever pasta you have(usually bows in our case). Then add the onions and garlic and serve!

    YUM!:D
