Had these while in Shetland on Holiday mmmmm. Serve with rice or pasta
1 egg, 1 oz rice crispies, 1 medum onion finely chopped, 2oz dried milk, 2 tblespoon ketchup, 1 tsp salt, pepper, 1lb mince. combine in large bowl, shape into walnut size balls, bake in single layer on baking tray at 200/400 as mark 6 for 10 -12 minutes until well browned. Meanwhile make the sauce
1 can tomato or bbq sauce ( homepride - ), 5 tbles ketchup, 2 oz brown sugar, 1 medium onion chopped, 2 tbles chutney, 2 tbles worcester sauce, 1 tble vinegar 1/4 teaspoon pepper. cover cok on low heat for 15 minutes then add the cooked meatballs - cook for 10 minutes.
Enjoy - I am just off to Costco to stock up on mince now!!!No Longer addicted to Boots! - Well not today anyway!! :blushing:

We use it make our own sausage rolls:
1lb mince,
1 slice bread whizzed to breadcrumbs in food processor,
1/2 medium onion ,
1 beaten egg,
salt (we use about 1 level tsp but adjust to suit your taste),
1/2 tsp chilli powder,
1 rounded tsp ground coriander,
1 tsp ground cumin,
handful chopped fresh green coriander (can use parsley if don't have coriander)
1 packet of puff pastry - we use saxby's but can make your own if you like.
(1 - 2 chopped green chillies optional)
Preheat oven to 180 deg C/160 deg C (fan)
Blitz the onion in the processor until v finely chopped, add breadcrumbs and spices and HALF the egg and blitz until combined into paste. What I do next is turn it out into bowl with mince and mix by hand but can combine in processor if you want - just pulse gently.
I cut the block of pastry in half and do in 2 batches - have small work surface!
Roll out pastry to about 1/4 cm thickness (can do thicker if liked but we like small sausage rolls not the jumbo ones)
Divide into 3 even strips, take mince mixture and shape into sausage and place on pastry. Use remaining egg mixture to moisten edges, roll pastry over mince into sausage shape and brush egg mixture on top. Use knife to slash steam holes along roll and cut into 6 equal sized pieces (about 3-4 cm long). Repeat with remaining pastry and mince mixture. Place on foil lined tray (easier to clean!)
Bake in preheated oven Check after 15 mins and turn to cook evenly. Cook for a further 10 mins or until golden brown and cooked through.
I find this works well with all kinds of mince - especially chicken (made from thighs/leg meat not just breast - that is just rubbery and tasteless).
If using fresh mince, can leave out the egg if wanted and just use milk or water to seal pastry/brush on top.
I make them for all occasions - just vary the size and level of spices! Smaller for parties or children and add green chillies for the heat freaks!
If have left over mince mixture or extra, make spicy burgers: shape into patties and just fry in a little oil to seal and then grill, turning frequently until brown.
Serve as normal burgers or in pitta pockets with salad or chop into strips and make fajitas or wraps.
Can freeze uncooked if using fresh mince to bake later.

The new somerfield mag for August has 3 different things to do with mince.
I don't have it to hand but they where different parts of the world.
The recipes don't seem to be on line.

I made a load of spicy meatballs really cheaply once. I mixed beef and pork or turkey mince that was reduced with a grated carrot (bulks out the meat), breadcrumbs, seasoning, fried onion and perhaps an egg to make them stick together.
Shape into balls and brown the outside.
Put at the bottom of a slowcooker or casserole dish and cover with sauce.
I can't remember exactly what was in the sauce, but I think it was tinned tomatoes, herbs, curry powder, fajita seasoning, onion and garlic and any other veg that was in the fridge.
Careful you don't stir it too much or some meatballs will break up. There will probably be some sauce left over afterwards so just use that to go on some pasta the next day.0 -

Anyone have any more ideas for mince? I have taken mince out of the freezer for tonights dinner and as yet have no idea what I am going to do with it. We have already had shepherds pie, spag bol, chilli and mince and tatties recently so looking for some inspiration - preferably something quick and fairly easy.0

i got this idea from a pub we used to eat lunch at as students. They served all their dishes (stew, chilli,cauli cheese etc) inside giant yorkshire puddings.
Anyway,
fry mince, onion and garlic (as if you are making spag bol/chilli etc)
add to it a tin of oxtail soup, a tin of baked beans, and sweetcorn
serve with rice, potatoes, or anything you want really.
I love this recipe, it tastes fab0
