A couple of old family favourites;
I make beefburgers in red wine sauce which is just plain mince formed into burgers and browned with Homepride red wine cook in sauce poured over and cooked in oven. Serves with chips and coleslaw. This was a "recipe" way back in a small mag called Home and Freezer Digest.
This recipe also came from that mag - bacon steaks. make largish meatball shapes with mince and onion, wrap streaky bacon round them and squash down a bit. Cook in oven for about 45 mins, serve with whole tomatoes baked in oven in the same pan for about 15 mins and peas and chips or roast squash.0 -

Good old cornish pasties!
Mince, onion, swede, carrots, peas and any other veg you may have. Oh yes and a stock cube.
Chop it all up very finely, season, wrap in pastry (i cheat and buy mine) paste some egg over the top and cook till golden, we love this.8 months to go till end of the IVA :j:rotfl::T0 -
donner kebabs - mince (lamb is best but beef is good), process with garlic, salt, pepper, cumin, coriander, chilli, touch of cinnamon, lemon juice and a tablespoon of wholemeal flour (or whatever) until it loses the minced look. Take out and flatten onto baking tray until really thin. put under really hot grill. When brown, slice (into donner kebab type strips) turn and pop under again. You can spice as much or as little as you like.0

KEEMA CURRY
Keema is Hindi for minced meat.
Serves 2 to 3
INGREDIENTS
200g of new potatoes
1 clove of garlic
2cm (1 inch) piece of fresh ginger
2 onions
1 tablespoon of oil
1 teaspoon of chilli powder
250g of minced meat
200g (½ a 400g tin) of plum tomatoes*
1 tablespoon of garam masala
½ a teaspoon of ground turmeric
50g of peas
METHOD
Wash and scrub the potatoes, and chop them into 1cm (½ inch) pieces. Peel the garlic and chop it into tiny pieces. Peel the ginger and chop it into tiny pieces. Peel the onions and chop them into tiny pieces.
Put the oil into a saucepan on a low heat. Put the chilli powder, garlic, ginger, mince, onions and potatoes into the pan. Cook for about 30 minutes until the mince is an even colour, with no pink bits. Stir frequently to stop it sticking.
Open the tin of tomatoes. Put the juice into a bowl. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the bowl). Put the chopped tomatoes into the bowl. Put half the chopped tomatoes into the pan and save the other half.
Add the garam masala, turmeric, peas and water. Stir thoroughly.
Bring to the boil, then turn down the heat until it is just boiling (simmering). Put the lid on the saucepan and cook for 15 minutes. Check the water level from time to time and top up if it starts to dry out.
ADDITIONS & ALTERNATIVES
Use minced beef, lamb, pork or turkey, whichever is cheapest. If the pack is a bit less than required, add some finely chopped mushrooms or grated carrot at the same time as the meat.
Both the peas and the potatoes are traditional ingredients. You can omit either, but not both. If you omit the potatoes, increase the quantity of mince and peas to compensate. Use fresh, frozen or tinned peas. Use fresh or tinned new potatoes.
The quantity of chilli powder above makes for a medium curry. For a hot one, increase this to 1½ teaspoons.
For a mild one, decrease this to ½ a teaspoon. Add 100ml (½ a 200ml pot) of yoghurt 5 to 10 minutes before the end of cooking. Add ½ a teaspoon of mint sauce to the leftover yoghurt to make some mint raita.
* Plum tomatoes can be used either whole or chopped. It is difficult to stick chopped tomatoes back together again if you need to use them whole.The acquisition of wealth is no longer the driving force in my life.0 -

I love mince, it's so versatile
Spaghetti Bolognese.
I fry mince with onions and mushrooms, add dried Italian herbs, a stock cube, crushed garlic, some tomato puree, tinned tomatoes, salt, pepper and some red wine.
Whenever I talk to anyone on how they make their's, or watch cooks on telly there always seems to be big variations in the recipe, same with chilli, cottage pie, savoury mince.
I've only ever used minced beef anyone one used any other types of meat.
What are your mince recipes?

There is a thread on the old style board about mince recipies, runs to about 30 pages I think.
I have used minced turkey or lamb instead of beef for some recipies.0
