    Ketchup, two peppers, two red onions, corn flour, lemon juice, olive oil, tinned sweetcorn, basmati rice, dried herbs, garlic cloves, mayonnaise, lettuce, a courgette, cucumber

    This one we enjoy in courgette season a lot: crumble and fry the mince in a frying pan or wok (with maybe a drop of olive oil), add a chopped onion and cook until the onion softens and the mince has changed colour. Add cubed courgette and some salt & pepper, fry till the courgette softens. Transfer the mixture to an oven-proof dish (or Remoska if you have one!), pour a beaten egg over and bake in a moderate oven for about 20 mins. Serve with rice, accompanied by tomato ketchup.

    I've got 2lb of mince and usually i either make a mince and onion gravy with spuds or spaghetti bolognese. What else could i do that would be quick and simple?

    Chilli, it's quick and easy - you can freeze it and you can have rice or baked potato with it. ;)

    Hi

    To make chilli I fry onions + mince.
    I add kidney beans in a chilli sauce and canned tomatoes. If I want it a bit more spicy I add some more chilli powder.

    My son doesn't like kidney beans so sometimes swap baked beans for chilli beans. Also add chopped carrot & pepper etc.
