Onion tarte tatin tonight, very nice, will definitely have again, only we'll serve it with gravy, as we did tonight - last time we had it, !!!!!! just found it too dry and requested gravy for the next outing of the dish, so he got it ;) I was happy enough with the dry version, but it was actually nicer with the gravy.

I said it last time we did this dish, but Im happy to say it again - I find this the nicest version of the onion tart out of all those I tested since Weezl started this challenge (and I tested about four different versions in total).

I'm going to start Christmas early by making the smoked salmon pasta this week. It will be either tomorrow or Thursday, not sure what's happening in RL yet! Can't wait - it sounds nommy :)
  • Stumbled across this lost in my faves file the other day.

When I made it I frugalised with onions instead of leeks and grated potato instead of hash brown ( tiny cubes would work too). I used some left over fresh salmon ( tiny bit) but thought it might be an alternative or another use in the xmas menu for the smoked salmon. It also works with chicken or with just the veg.

Also, this recipe provides a good example of how to frugalise a recipe I think.

My frugalised method would read :

" take 1/4 of a batch of bread dough, roll the dough to a 12x15 inch rectangle and place on an oiled baking sheet. Spread the centre 1/3 of the long side of the dough with mustard. Make the white sauce as per the method for calzone. Chop and fry 2 oinions with 3 slices of bacon, snipped into tiny pieces. Add the fried onions and bacon to the sauce. Spread the bacon over the mustard. Cut the outer 1/3 on either side into 1 inch strips and cross them over the sauce mixture alternately, to make an attractive plait effect. Brush with milk if you have some, or salted water. Leave to stand in a warm place for 30 mins. Bake at 375f for 20-25 mins.

Braids look really quite fancy and might be good to serve to guests or at a buffet. It also occurs to me that the olive and lentil pudding mix might be nice, or just the normal calzone filling, probably other cfr fillings too....ooh chicken and onion.

    HTH someone.

Just a quick query - doing my online shop - amazing how much prices have changed, really up and down but works out roughly the same :)

There's a few things on the recipes I've looked at so far you haven't included on the shopping list - I don't know if you assume people already have them? They are: garam masala, vinegar, garlic, chili, garlic powder, and basil :)

Haven't looked at recipe for Onion tarte yet, but do you use shallots instead? As they are sweeter.

However, did big shop today at Tesco. Bought big bag of pasta, potatoes, onions.... etc, etc :)

Am going to try to make onion soup on wednesday.

Currently have in oven HM Italian herb sundried tomato rolls. Hope they are yummy as want to take to work tomorrow.

snow - the seasonings/spices were not included in the shopping list as I think we assumed that most people would already have them in their kitchens. Plus, weezl calculated there's a certain amount of money left over (I think it's £20 a year??) if you do the maths so that would be more than enough to buy the seasonings required.

aureol - nope, the tart uses onions! Shallots are far too expensive for Kitty's need for frugalness ;).

This will eventually go on the website, Snowed -

The reason we have not included the cost of seasonings in our £100/month planner is because the £100 is designed to cover a 31-day month. Since not all months have 31 days, this leaves a remainder of approximately £22.40 over the course of 1 year, which more than pays for the seasonings being used in the planner's recipes.

Vinegar, though, is included in the shopping lists - malt in Option 1, balsamic in Option 2 :)

Aureol, no pricey shallots, just ordinary brown smart price onions - and they were luvvery :T

ETA: How does it look now, Snowed ? Does this make it clearer ? :)

  • Awesome :) It wasn't a gripe over buying them, or the cost - more that a few items like garam masala and garlic powder I don't have in the cupboard, so if I hadn't have skimmed over the recipes I wouldn't have had them when it came to cooking :)

Good point ! What do you reckon the best solution would be ? Say on the same page where it says about seasonings budget which seasonings the recipes use so they can be bought in advance ? Or something else ?
