If you use 2-3 pints as you say, why not buy 2 pints and cut back? (and perhaps make it clear to whoever else may be in the household that once the 2 pints are used that's it for the week?)
If it were me I'd approach it like cutting back on spending by a third and basically pay closer attention to the usage. That little bit less on cereal, one less brew per day, etc.

Remember if you decide to freeze any milk to label it. (the same for anything really).
Last weekend I picked my crop of homegrown blueberries with the idea of making a pie along with the last of the apples that I stewed and froze around Oct/Nov. I took the apples out of the freezer and noticed the label had disappeared. ("never mind, these things happen"). Several hours later I made up the pastry and then discovered my "apple" was actually a pot of milk! :eek:. Fortunately I overcame my surprise. The pie became blueberry only and the milk went into some custard to top it off.0
