    Thanks SunnyDay.

    I've got my three little sausages nicely vacuumed packed and ready to eat tomorrow. The sausage casserole will be eaten tonight so i'm nearly out of sausages now!

    I'm thinking that rather than microwaving them, i'll probably heat them more gently in a pan or in the oven. That way I may avoid any rubberyness.

    I still havent eaten the sausages because I decided to do a full fry up this morning... .on the bbq! Everything except the beans, there was just no room.

    We had bacon, sausage, hash browns, mushrooms, eggs, then sat out in the sunshine and scoffed the lot!

    Make a sausage tart.
    Get a sheet of jus roll pastry,turn up the edges to form a wall & brush the bottom with a mix of mustard,red sauce & a dash of worcester sauce.Fry off some finely sliced leeks & add to the bottom.then slice the cooked sausages on the diagonal.arrange on the pastry & sprinkle over grated cheese.Bake in the oven till golden.
    You could also individual ones by cutting the pastry sheets into four then alternate sausage,black pud,sausage ect,slightly overlapping the slices then bake but a few minuted before serving,crack an egg onto each tart & return to the oven & have for a brunch dish with a salad.

    Yesturday we had sausage and mash for tea and I was left with a lot of mash , so today I am using the mash to make fish cakes with a tin of sardines that I have sitting around.

    I also have left "2 sausages" and want to make something for tomorrows dinner with it , I would appreciate some ideas because all I can think of is sausage casserole & toad in the hole.

    I always do way too much mash so usually do a cheese and potato pie with leftovers..yummy :D

    With the sausages I'd chop them up and do mini sausage toads in a 12 cup bun tin will stretch them a bit further if you can cut them into 4's??
    I often do the boys some with cocktail sausages
  • How about sausage stir fry or sausage with pasta and sauce?

    mmm thanks, that sounds lovely but I forgot to mention my son has a egg allergy :o.
    I also thought of a sausage pasta dish but my husband isnt keen on pasta . Which makes me wonder if I should do a risotto instead.
    They are 2 large sausages and there are 4 of us to feed.

    There is a recipe on the bbc good food for a one pot sausge and rice thingy that we make occassionally - it uses uncooked sausges but sure you could use cooked.

    ETA for half a sausge each I'd be tempted to add another protein source - a tin of beans (haricot/ cannellini are good with sausages) or a handful of lentils

    We never have leftover sausages - I could cook 60 and they'd still get eaten!!
