Peel off skins and break meat up into a pan (like mince). Add chopped onion and cook off. Add tin tomatoes, herbs and pepper. Simmer while you cook some pasta. Mix into drained pasta.

Plenty for three people. I make this a lot. You can also add in chopped bacon and any veg you fancy: mushrooms, broccoli, peas...

We need to seriously pad these out. Skin them, chop them in half (to make it look like there's 6) and use them in a sausage casserole. Home made. (Have you read the ingredients on a packet of sausage casserole sauce mix?) Recipe available on request.
If you fold it in half, will an Audi A4 fit in a Citroen C5? :)
  • Being an unhealthy lass I'd use the sausagemeat to make scoth eggs, flattened out and wrapped around boiled eggs, breadcrumbed and(bad me) deep fried :D bit of salad, homemade potato salad, yum (I am not a skinny lass!)

I hate hate hate sausage skin. Nasty stuff.

I always peel the skin off sausages before I cook them. Bit of a time consuming PITA but hey ho, I'd rather than than a mouthful of skin.

You've only got 3 left, that's not going to go far for 3. Veg (loads of) and sausage stew as HMJ suggested above.

Hope you soak them in cold water before skinning, done in half the time!

I would chop sausage cook pasta and mix together with chopped tinned toms with garlic & tin of baked beans, upend in dish, sprinkle with crushed crisps and grated cheese :)

Squeeze them out of their skins and mix with grated apple (bramley or granny smith) and sage and onion stuffing mix, make into burgers. Should easily be enough for a burger each so just add buns and salad/wedges.

Never done that but will make sure I do it next time. Thanks for the tip.

I have to say, after reading this thread, there's a surprising amount you can do with 3 sausages.

I might do this deliberately to cut down my food budget.

I can just hear it now....

"what are we having for tea?"

    " sausage casserole"

    "great"

"wait a minute, did you say sausage casserole or veg casserole?"

"sausage. you just didn't look hard enough"

How many times can I get away with that one do you think? :rotfl:

What is your recipe please Steve?

So many great ideas on here, thanks everyone. I agree with aliasojo, a good starting point for cutting down on meat!

I back the sausage casserole, my recipe is below (but you can chuck anything in there really!):

    Sausages
    Onion
    Red Pepper
    Carrot
    Tin of chopped tomatoes
    Tin of beans
Few drops of tobasco (for flavour not spice)
    Chicken or Veg Stock Cube

While grilling the sausages, sweat the onions and carrots for a while in butter, about half way through sweating chuck in your peppers.

Once done, off the heat and a bit of flour in to soak up the butter and veg juices.

Chuck in the toms, beans and tobasco. Crumble in your stock cube and bring up to heat while cutting up your sausages.

In go the sausages and simmer for another 10 minutes or so.

Serve with some crusty bread, yum yum.

Thats the basic version, but its a great way to use up any old veg, single pieces of bacon etc as anything goes with it really.

Also, for yours you can skin the sausages, make them into balls and fry them off.
