There's a very nice sausage casserole in the Slow Cooker Recipe Index which comes highly recommended. Even if you don't have a slow cooker you could do it as a straight forward casserole.

    Hi Squeaky

I have been looking for this but I can't be looking in the right place. Can you point me in the right direction please?

    Thanks :)
  • Mmmmmm just taken the sausage casserole out of the oven & it tastes yummy - will be feeding my 1yr old some of that for his tea & freezing the rest down - now grilling up some sausages for tomorrows lunch :)

I took two tiny sausasges out of the freezer for dinner but need to stretch them out! Any ideas? I have 5 small potatoes, onion peas and sweetcorn, maybe some peppers, tinned toms, beans, cheese, eggs, loads of store cupboard stuff - pasta, rice, couscous, lentils, heaps of herbs and spices. Just lacking in inspiration today ! Anyone any genius ideas? They are chilli flavoured butchers ones :D

I made the Tasty Sausage Casserole role recipe from the Good Food site a few weeks ago

    http://www.bbcgoodfood.com/recipes/6097/tasty-sausage-casserole

It's delicious and adaptable - so tinned tomatoes can replace the passata etc. OH loves this and I managed to batch make several 2 person portions by chopping the sausages into small pieces.

  • I got a pack of sausages out of the freezer intending to cook them for husbands lunch tuesday night. I forgot!! Then thought i could eat them last night but we were late back so didnt eat them then either. They were reduced when i bought them but i dont mind eating things a little out of date but ive got dinner tonight planned and that needs to be eaten tonight!!
So, can anyone suggest anything i can do with them, preferably some sort of slow cooker casserole i can cook and freeze. Ive also got tined tomatoes, condensed mushroom soup and carrots/onions/parsnip/half a swede and potatoes.

You could just cook them under the grill and pop them in a bag in the freezer. This will save them until you need them for a quick sausage and mash or toad in the hole type meal.

Or you could make sausage meatballs - slit sausage skin, make two balls from each sausage, fry till cooked, cool and freeze. Serve with penne pasta and tomato sauce.

I'm sure someone will be along soon with a better idea.

  • Grill them today - reheat in microwave on Saturday and have Sausage butties for Breakfast/Lunch/Brunch!

Or chuck them in the slow cooker with your toms, carrots, onion and few herbs and you have a basic sausage casserole for the freezer (I would grill sausages first to give them some colour)
