You could:
(1) slice some onions and soften in a little oil.
(2) slice some courgette or marrow.
(3) half or quarter some tomatoes or use a tin of toms.
(4) deseed and slice some red, green and/or yellow peppers.
(5) add all of the above to an oven-proof dish with some garlic, salt, pepper and herbs to taste (a small amount of sage goes well, or some thyme and a couple of bay leaves).
(5) arrange the sausages on top and bake in a moderate oven for 1.5 to 2 hours until the sausages are browned and the vegetables have released all their juices.
Serve with rice, mashed potatoes or crusty bread to soak up the juices.
NB - If you use marrow you can leave the skin on during cooking as long as you wash it first, but it's a bit too tough to eat.0 -
I really like sausage curry, because it is packed with flavour and is so cheap to make.0

I'm making sausage lasagne for the first time tonight - its a Martha Stewaet recipe that uses sauasages crumbles into a garlicky tomato sauce and layered with mozarella and pasta, topped with parmesan and baked till cripsy - will let you know how it works out.People seem not to see that their opinion of the world is also a confession of character.

Hi boredjellybean,
There's an existing thread with lots of ideas for using sausages that should help so I've added your post to it to keep the suggestions together.

My reply to the post seems to have gone!
I wonder if you merged the exact second I posted ?
Odd, but never mind, I expect the same suggestions are already on this thread.Ermutigung wirkt immer besser als Verurteilung.
