Bluebelle and Dragongfly welcome and the lentil soup sounds great, any chance of the recipe please?

Hi everyone! As requested, my lentil soup recipe (from 4 Seasons book):

Serves 4, free on Green, 11 syns on Original

    300g red lentils
    Fry Light
    2 onions, chopped
    3 carrots, chopped
    4 celery sticks, chopped
    2 garlic cloves, sliced
    1 bay leaf
    3 sprigs parsley
    1.5 litres stock
    salt and pepper

Wash lentils, put in bowl and cover with hot water. Leave to soak 30 minutes.

Meanwhile, cook the veg and garlic in fry light in a non stick saucepan ( a large one!). Cook for 10 mins until softened.

Drain lentils when they've had their half hour soaking, and add to the veg. Add the herbs and stock, and simmer for 30 mins.

Remove bay leaf and parsley sprigs and blend until smooth.

Reheat before serving if necessary. YUM!!!

I also added some red chilli, but to be honest, this sort of soup would be great spiced up with whatever you fancy. Mmmmm!

    Hope this helps x

Dizzy, you have PM. Happy to help :-)
Yaaay, I finally conned a man into making a honest woman of me. Even more shocking is that I can put the words "Happily" and "Married" into the same sentence and not have life insurance on my mind when I say it ;-)
  • Have had another good day today. Fancied a veggie cottage pie at lunch, but couldn't be bothered to make it, so served up some of yesterday's quorn bolognese with mash and peas! It was gorgeous!

The I had a cauliflower to use, so for tea I decided on vegetable curry. Lots of veg in a hot and sour type curry sauce. I used a recipe from a curry book and just made it low syn. Was delish! Didn't fancy rice, so had some homemade (and fat free) chapattis with it. Really satisfying.

Just wondering what to make for tomorrow's work lunch now.... The possibilities are endless!!

Good story. bit dismayed to see the stories running alongside it - Britney's skinny legs, Vanesse Paradis looking skeletal, super skinny tara palmer tompkinson, various other bad role models and celebrities being picked apart for this that and the other. Gotta love the daily mail....
