    OH trying to sabotage my slimming efforts, he's just ordered a curry to be delivered at tea time from the just eat website which i rarely say no to but i had a fair few flexidays last week and on my last slimming world venture, anytime i had bad eats, always showed at the next again weeks WI! i've said no as i've got a lovely lamb steak which i'll have with a spud and a rocket salad on the side. but i think i'll have to leave the house and take a walk or drive out whilst he's munching.

    p.s i'd love the madras recipe please!!

    Serves 6 (or more like 4 in our house!!)

    1 Kg lean beef steak (I use skirt - thrifty and tasty)
    2 Tsp Corriander seeds*
    2 Tsp Cumin seeds*
    1 Tsp Turmeric*
    1 Tsp Chilli Powder*
    1 Tsp Salt *
    3 Tbsp Vinegar (I use white wine vin as it’s always in the cupboard)*
    1&1/2 Tsp Black Mustard Seeds
    1 Lg Onion
    1 Med Onion
    2 Cloves Garlic
    Thumb Size piece of Ginger
    1 or 2 fresh chillies (depends how hot you like it!)
    2 Tbsp Tom Puree
    Beef Stock
    Chopped Corriander (optional)

    ~ I toast the coriander and cumin seeds in a pan and then grind with the sea salt but you could use ready ground.

    1. Cut the beef into largish cubes (remove visible fat) and place in a bowl with the things that have a * next to them to marinade. Set aside while you prepare the rest.
    2. Put the lg onion, chillies and peeled ginger and garlic in a food processor and blits for a few secs but you could just chop them fine. Chop the med onion into slices.
    3 Heat a large pan sprayed with frylight and add mustard seeds for a minute or two, then add the onion mixture and cook gently for about 10 mins (you want them to brown but not burn.
    4 Add the med chopped onion and fry for another minute then add the tom puree and cook for a further 2 mins
    5 Add the beef and spice mixture and cook until sealed then add enough stock to just cover the meat.
    6 Bring to the boil then turn down the heat and let simmer for about 1 ½ hours until beef is tender and the sauce coats the meat nicely. Sprinkle fresh coriander before serving if you want to.

    *** You could also use chicken or other meat in this but you will need to adjust cooking times

    Now I feel I need to explain that I do not syn tomato puree, I don’t think it should be synned but if you want to it’s ½ syn per tbsp so 1 syn in the whole meal.
    I also realise that there is not enough superfree in this meal, I have tried adding veg to the curry but it wasn’t nice and effected the taste. What I do is get a selection of veg – whatever is in the fridge like babycorn, toms, courgette etc and stir fry those with garlic and curry powder and serve them as a side dish. I make sure at least a third of plate is full with the veg before I add the curry sauce and rice.

    Thanks for that I haven't tried smash for about 20 years but will have a go at this one and see if its better than the one i made up :)
