Hi, hope I am not duplicating here, but I made a veggie shepherds pie last night and it was delicious so thought I would share the recipe.
Red Pepper
Yellow Pepper
2 red onions
3 Large carrots, grated
1/3 bag of dried soup mix
tin of basics tomatoes
tin of basics baked beans
bit of garlic
1 veggie stock cube
few splashes of worcestershire sauce
3 large potatoes - cooked and mashed
some grated cheese
Boil the soup mix then simmer for around 15 mins. Set aside. Fry off the onions in some olive oil, add peppers and cook for about 5 minutes, then add all the other ingredients including the soup mix. Simmer gently for around 15 minutes.
Put this mixture into an ovenproof dish and top with mash and grated cheese. Bake for around 20 mins or so on 200C
Gorgeous! Will serve 4 if you serve with loads of veggies.0 -

My daughter has been wanting to "go veggie" for ages and as a lapsed veggie i know the benefits of a good diet, but trying to persuade a teenager that just by cutting out meat from you diet does not make you a veggie is v v v hard lol
HOWEVER, she has seen your thread and has ASKED to try to COOK some meals herself.....

Oh that's GREAT! How old is she, ducatibabe? I asked to be vegetarian when I was 7 but my parents made me wait till I was 16. It was harder then to find the right things to eat and my parents didn't know much about nutrition. I'm bringing up both my sons vegetarian from birth and it's so easy now.
Let us know how she gets on with the cooking. Have you seen the other 2 meal planners? There's one on seasonal veggie cooking for summer and one for spring.May all your dots fall silently to the ground.0 -

I've been thinking about going back to being veggie for my health, purse and for ethical reasons and this is just the inspiration I need.

She's 15 almost 16 :eek:
shes a good kid and tries hard ( wont eat sweets with gelatin in etc) but must be one of the few veggies who wont eat vegetables or fruit:rolleyes: so as you can imagine being at the age where she knows EVERYTHING and i Know NOTHING, trying to get a balanced diet into her is a nightmare.
thankfully she found your recipes herself and so they are ok to try lol.
I dont mind being the dumb mother as long as she is eating sensibly and it looks like she might be trying to that with a LOT of help from your (and everyone elses) posts on here.:D
I wish I had stuck being a veggie, but like you when I was pregnant with my daughter i craved beef burgers (YUK) and fell into bad habits then when my hubby left when she was 3 weeks old I found life difficlut and the last thing I wanted to do was eat, so my mum helped me by cooking for me along with the rest of the family and bringing meals to my house.
Unfortunately I was the only veggie in the family so she brought all sorts of meat laden meals and i kinda fell out of the veggie habit

That sounds really hard. She sounds like a total credit to you. I love to hear about young people being enthusiastic about learning new things, taking responsibility for their own diet and rising to a challenge. Well done her AND you!

Hi, just a little update, we tried your lentil and carrot soup for tea (with homemade bread and it went down a treat
WE made a big pan and so have enough for tomorrow and have frozen a ton too
