Great thread, thanks. Am trying to cut our food bill (I mean, £150 plus a week for 2 adults and 2 children? it's ridiculous) and less meat is one of the tactics. I noticed though that most of you don't make your own nut loaf and I an excellent one to share. Doing the hazelnuts is a bit of a pain, but it's ok if you have a grinder or good processor.
Hazelnut and vegetable loaf
Heat 2 tbsp oil in a pan, add 1 chopped onion and soften. Add some garlic and 2 sticks of chopped celery and fry for 5 minutes, stirring occasionally. Mix in 1 tbsp wholemeal flour and then stir in 3/4 cup of tomato juice. In a bowl, mix: 125 g ground hazelnuts, 2 cups fresh brown breadcrumbs, 2 grated carrots, 1 tbsp shoyu sauce, 2 tbsp chopped parsley, a beaten egg and seasoning. Mix this with the tomato mixture, pour into a greased tin and cover with foil. Hi Gingham - I know this is an old thread, but I remembered reading your recipes ... and I just want to say thanks because I am now going to actually try cooking from scratch more often. I have been using such items as Lloyd Grossman sauces - (which ARE really nice, but cost about £1.80!!!). So, we have been uninispired veggies - but no more! I am definitely going to follow your recipes!

There's a link on another thread to the carrot and lentil soup. Here. That's for the slow cooker. If you're doing on the hob, just throw everything in and simmer it for about 45 mins. (Or saute the onion first if you prefer.)May all your dots fall silently to the ground.0

I just wanted to say thanks too! I have been slowly turning my family veggie (the kids don't know yet!) by firstly reducing meat meals to just three times a week and this week have made two of the meat meals (spag bol and shepherds pie) with meat free mince. The shepherds pie is tonight so don't know how that will go down but everyone liked the spag bol more than my meaty version - I just told them that it was different because I added a little red wine vinegar.
I'm looking forward to trying the sausage casserole and the lasagne - thank you!0 -
