Broccoli Blues - what to do with the stalks?

    me and my daughter eat lots of brocolli and if we dont eat the stalks the same as the florets i tend to put them through my juicer with whatever fruit and veg ive got lying about

    Wanted to use up some brocolli I have lying around and was thinking of making a soup from a recipe book I have. I don't have enough to make half the recipe but obviously don't want to go out and buy more or that would defeat the point and we are not overly brocolli fans -I bought it for a change. Anyway would it be o.k to use the stalk and just chop it up and cook it and put it in? don't want to waste it and thought I would give the soup a go? Anyway

    HI dancingfairy, the stalks will be fine to use in soup, it all get's blitzed after all...
    they just take slightly longer to cook that's all.

    Yep, I make soup from just using the stalks an onion a stick of celery and stock. Blitz it up and it tastes lovely.

    Thanks very much. I'm very new to this old style life. But really getting in to it. Just moved house rented to rented but the bills are overlapping hence the reason for getting stuck into the oldstyle but I am really getting in to it and we are trying load of different recipes.

    I always save the stalks now and mix with other bits that at one time I would have thrown away or composted, eg the outer leaves and stalks from cauliflowers, the ends of asparagus. I make a soup out of them adding an onion, carrot, potato, or whatever is lurking in the veg drawer along with vegetable stock, just blitz it up and it's fab. Comes out tasting different everytime so never get bored! If I've got some old stilton that needs using up, I toss that in as well. If I don't want to eat now I freeze it in portions. Had a bit of fennel left over from a holiday in France and that went in the other week, added another flavour to it. I never throw out anything now that can go in a soup. Would highly recommend!

    :j Hi, I cook the stalks all in together with the broccoli, when it's served up my eldest daughter always asks for the stalks. What more could I ask for not only a child who likes broccoli, but wants the stalks.:rotfl:

    Does anyone have any suggestions on what to do with broccoli stalks?

    All I can think of is slicing them fine and then stir frying

    I chop them along with the broccoli and eat them at the same time. Stir frying would also work or blitzing them in with soup.
