Broccoli stalks nutritional Couple of useful moneysaving/nutritional ideas at this link. I must admit I hate buying the prepack as it often appears to contain more stalk than Calabrese.
But based on the knowledge that the stalk contains 32 calories, some beta carotene and nearly twice your daily requirement of vitamin C it seems a shame to waste it.
So you could grate it and call it "broccoli slaw" or use it in any recipe calling for shredded cabbage another good idea is to peel, slice them in one-quarter inch diagonal slices and stir-fry.My weight loss following Doktor Dahlqvist' Dietary Program

I adore broccoli and eat large amounts of them, especially if I can find the deep purplish variety.
As Ted says, it is a shame to waste the stalks as they are so nutritious, and I just cut off the dried up bit at the bottom then dice the stalks for cooking with the rest. Makes it all go further and it's very healthy.Be careful who you open up to. Today it's ears, tomorrow it's mouth.0 -
There's a Jamie Oliver recipe for brocolli & anchovy pasta which uses the stalk and it's fantastic. Very few ingredients, very simple and VERY tasty. Not sure if I'm allowed to post the recipe though.0

My housemate was using broccoli for tea and was going to throw away two big broccoli stalks. I thought I could use them somehow and asked if I can have them - can you make broccoli soup? Or does anyone have any other suggestions? It seemed a waste, and now I can't think what to do with them!

To be honest I just peel the stalks and use them in exactly the same way as the florets! But maybe that's just me. The skin of the stalk can be tough but otherwise it has a very nice taste and texture once cooked.0
