  • A couple of years ago there was a lady on TV cooking cereal bars using apple juice as the binding ingredient. I think she was promoting a cookbook of healthy recipes for toddlers/kids. I`m sorry I can`t remember who she was, may have been Annabel Carmel - could be worth a flick through the books at the library or bookshop to find the book as it will likely contain other things you may find useful.

If you read the ingredients for things like Alpen bars they're really high in sugar - they only get away with saying that they're healthy by having really small portions. So if you made fruity flapjacks and cut them up equally small they'd be just as good.

  • Nigella has a great recipe for 'breakfast bars' which is a mixture of nut, seeds, oats and fruit and it is bound together with condensed milk. This was in her Express book, and probably on her website.

Snap! I was just going to recommend this recipe! It's really easy, really tasty and keeps forever. :-)

  • This is very popular in my house and I take it to work most days for a late breakfast, usually substitute a few brazils and dried apricots for the peanuts as I'm not keen

I'm planning on making some myself soon. Also planning on substituting the peanuts for brazils and dried apricots as I like them and already have them in.

I've made some before, not sure if they are like the kelloggs ones but they are tasty:
Melt about 1/4 a bar of butter in a saucepan, add 1 cupful of chocolate chips, half a jar of peanut butter and some mini marshmallows until they all melt together. Then add rice crispies and mix together.

Put in a square dish (i use the one for shepherds pie) and allow to cool. You can add some melted chocolate & peanuts as a topping if you like or just cut into bars once cool & eat.

Hard to eat only one though!!!
