    Seakay - thanks for that; I'll definitely try it. It sounds like the perfect solution! I've made cakes with oil before (yoghurt cake - a delicious recipe I found on a recipe thread on here a couple of years ago) but would not have thought of doing what you have suggested, so thanks very much! They only sell hard marg in blocks here, not the lovely soft stuff they have in the UK (Co-op's own I can definitely recommend!).

    Well, off to start the dinner, I suppose!

  • I just use butter - its reasonable enough price here (well I think) the hard marg is fine if out of the fridge for the day, I do the cakes in either the food processor or the kenwood chef so its not as though I have to have muscles like ARNIE.....the other alternative is President do a soft spreadable butter which Janette uses for cakes OK. Not sure I would use the olive oil, it may impart a strong flavour to the cake. I do use soft marg for the microwave cakes..different recipe entirely, if you would like it let me know.

    Evening ladies - well the "Knittie Nutties On Tour" bus is filling up nicely

    Interesting about the butter/soft marg for your cakes - I made a fatal mistake the other day - brought Sainsbury's basics soft spread thinking oh its cheaper etc - mixture looked a bit odd - cooked the cakes - they looked very odd and tasted even odder - looked more closely at packet - Great for spreading not for baking - doh didnt really save any money now did I :p

    Does anyone use a receipe for "Fatless" cakes ie fairy cakes etc - I made a fatless swiss roll at school but that is light years ago (Maggie Thatcher was in the hot seat thats how long ago it was!)

    Finished a set of slippers today and am pleased with them - got parcelled up all the knitting to send off and it sits ever so patiently at front door for hubby to take on Saturday (ISOM cat blanket on way sorry its late) - just about finished a set of bootees as well

    Am feeling a little listless today - "mojo" has gone away - only for my "auntie" (iykwim:rotfl:) to come to stay - trouble is "auntie" is here a bit too much :rotfl::rotfl::rotfl: - do you think its my age - Dr says its "normal" - but surely not 90% of the time! - my Mum says "oh you are at that funny age" thanks mum - Im going grey I no longer have my own teeth - and am worrying now that I should have put more cream on my face as a youngster and have left it too late for anti wrinkle ;)

    Well thats me tee hee hope the above makes you chuckle - it made me smile for the first time today writing it

    sock-knitter - good for you having a go at iris folding - have not tried it but have seen it in card making mags etc - what did you make ?? xxx

  • Evening all! Well Im back after a long treck up country and back down again! Probably passed a few of you on the way lol! Car was a mondeo with swanky bluetooth that I could not get the hang of...will investigate one for my car that I can swap over easily if needs be. So if you saw a woman just outside birmingham screaming at the dashboard it was just me trying to ring mum! Gave up in the end and rang from services!!
    Things do get worse as you get older F1 = think its bodies way of making hey before it gives up its ability to grow babies!!
    Seakay thank you for the offer but the whole idea is that you DONT do anything for once!! Weezl and family are coming too, along with a few others!
    oo just watching a rather sexy wildlife man on local tv...bbc1 "rhys to the rescue"...wonder if I can get his number!! Off to have a shameless drool!

    Miol cutrains sound a mare! Weezl had done cakes with oil and when I tried have to say was lovely, light and fluffy! Pop over to cheap family recipes/sitting pretty with kitty and say ISOM sent you!!

    Thanks for all the info about cakes - I think I've started something there! Will definitely pop over to the cheap family recipes, ISOM, so thanks for that, and Jean, I will try the President, too. I usually use St Hubert's spread for sandwiches and so on and not sure if it can be used for baking. DH does love his butter so I always have to keep that in!

    Sponge - I use this recipe for a big fruit flan base - when cooked and cooled tinned fruit of choice and a few spoons of arrowroot to set the juice as a jelly over the top

    OR SPONGE CAKE/swiss roll or sponge drops.

    2 eggs
    3 oz caster sugar
    3 oz S R Flour

    Break the eggs into bowl, whisk lightly, add sugar then whisk well until thick and creamy (almost white). Sieve flour, fold lightly into mixture. Place in a well greased 7" cake tin

    Sponge Bake in a moderate oven (gas 3-4 about 30 minutes. When cool slice and spread with jam and cream, lemon curd or Nutella (cheat I do ocassionally).
    Swiss Roll bake at gas 7 for 8 minutes
    Sponge drops bake at gas 6-7 for 5 mins.
    This does not keep Kathy, or Jacqui, needs to be eaten that day- which it usually is.

    so sorry to be sooo late on parade -- but all now thinking about Dmil's 80th. Today Dh and I have organised the Sunday lunch -- 3 themes on mince --- A great big Lasagne. A great big chiili Con Carne and a great big Cottage pie.Think there will be 16 of us so will just add a big salad ,garlic bread and a few chips.
    Before that we have 16 here for a BBQ on friday evening so fingers crossed for the good weather to continue. So lots of salady bits by me and then the men will take over the cooking!!!
    So I am knitting a new pattern at the moment to keep me sane but very little other crafting going on

    Morning all, looks like the nice weather has moved on, but over the last couple of days we've done a bit of clearing and sorting in the garden, so at least it looks as if someone cares. Mioilere, carrot cake uses oil instead of butter.
    ISOM sounds like you're working really hard with little rest, don't go and overdo it:) Hope your Mum's ok. Lay off that poor chap on tv, he's probably exhausted.
    Chalky sounds like you're really busy too, hope family parties go well.
    f1widow, doc should really listen to you about miserable 'Auntie'. Sure she shouldn't visit that often at any age! As for the face cream, wish I'd used it by the pot when I was twenty.
