I've just had a look in one of my books and there are two methods for plums. One is a bit complicated and involves heating the brandy, but the other method is the rumtopf type.
For that one, you need to halve and stone the plums and use 500g fruit to 250g caster sugar. Place the fruit and sugar in a jar and leave for an hour, then add the alcohol. Make sure that the fruit is immersed in the alcohol with about a finger thickness of alcohol above the top of the fruit.0 -

Yes, leave the fruit in it until you need it. With the rumtopf, where you add different fruits throughout the year, you leave it for 4 weeks after adding the last fruit, then add more rum, then give it another 2 weeks before eating the fruit, so I'd leave it for at least 6 weeks.
My cherry vodka has been in the jar for about 5 or 6 weeks so far but I'm leaving it until shortly before xmas before straining it. I'm going to use the boozy cherries to make choccies and bottle the vodka.0 -

Just made the plum vodka .. actually did the heating up thing first - I t5hink it just helps it off.. softening skins and dissolving sugar - can't see any other purpose.. If I have enough I'll try without heating first and see the difference0 -

We've just made some pear drop vodka using cheap vodka and pear drops that the kids wouldn't touch (thats the sweets not the vodka!!
) - can't wait to try it but was wondering if anyone else had had any success with other flavours as i think these would make great gifts in xmas hampers?
