bread crusts, what can i do with them?

I cut bread ends and stale pieces of bread into small cubes and stick them in a freezer bag in the freezer. Then when I want to make homemade stuffing, the bread is ready to go!

Lightly toast them, when cold whizz them up with a few herbs and spices then freeze them. Instant breadcrumb coating.MFiT Member No 85

I cube them as well and store in the freezer.
My kids won't eat soup without a huge pile of crisp croutons to sprinkle on top. I fry them in olive oil or dripping (yum) straight from the freezer.
They're also useful for whizzing into breadcrumbs for bread pudding and other recipes that require breadcrumbs.
I've just discovered this delicious savoury recipe using breadcrumbs http://www.marmiton.org/recettes/recette.cfm?num_recette=15193 I love this site, it has some fantastic and simple recipes. A rough translation is:
Tomato Crumble
serves 4
6 tomatoes sliced thinly
1 onion sliced thinly
4 tbsp olive oil
6 tbsp breadcrumbs
4 tbsp grated parmesan
Arrange the tomato slices in a shallow ovenproof dish. Drizzle with a little olive oil, season with salt and pepper.
Bake for 30 mins at 210 C
While the tomatoes are cooking fry the onion slowly in 4 tbsp of the oil.
Leave to cool a little, then stir in the breadcrumbs and cheese.
Spread this mixture over the hot tomatoes and bake for a further 20 mins.
C'est trés bon !
It's also good with white fish fillets baked between the tomatoes and the crumbs0 -
Freeze them and when you have enough, thaw the bag and take a small child to feed swans and ducks. The look on their face is wonderful - the child I mean.... although the swans and ducks like it too!0

I have a stack of breadcrumbs in the freezer at all time
i usually use them to coat chicken breasts for amazing KFC style - but tons better- "fillet burgers"
The other week I had a brainwave, sauteed loads of sliced mushrooms in butter, mixed in a good few handfuls of breadcrumbs and a generous handful or two of grated bog standard cheddar and chucked in a mini pyrex, sprinkled more cheese on the top chucked in the oven for 20 mins. Made a lovely side dish for having with steak & the trimmings.
I did watch a H fearnley whittinstall prog ( edwardian Xmas maybe) where he made breadcrumb cookies. Someone on here found it for me , so have a dig about. I never got round to making them as I tend to do granry loaves in my BM so i ythought it wouldnt work, but they did look nice on TV:beer: Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.

Breadcrumb cookies -I find these come out very soft, even when they are allowed to cool completely.
