Wow, how did you all learn to do this stuff? Did you go to classes or just read up and buy the stuff? Unfortunately, if I started making cakes I would be twice the size as I am now, and I am already too fat! I would love to have a go though, and would also love to do a chocolate making course....

Posted this on weddings but maybe this thread is where I should have asked. I am making a truffle tower for my daughters wedding!! Similar to this..

I have searched for suggestions on making it but none so far. Has anyone got any ideas. I thought of a chocolate cake in graduated layers and then shaped to a tower by cutting the sides then sticking truffles to it, they are mostly made and in freezer. Probably will use fudge icing on outside of cake to be a base for putting truffles on. Any suggestions/help would be great. Buying a fruit cake from M&S is not an option LOL

  • montezumas had huge truffle towers in the window :)
If I was going to make one I would do the following:
bake cakes in different round sizes. layer with buttercream / fudge icing and "carve/sculpt" from top to bottom with sharp knife until you have a cone shape. coat in melted tempered chocolate or fudge icing and stick the truffles on starting at the bottom .

I just started my own part time cottage industry business as a cake decorator after doing it as a hobby for 25 years
some of my cake piccies are here (1st time posting a link so hope it works?)

are you sure it has a cake inside?

its just it looks more like a croquembouche to me, so thats just the truffles stuck around a polystyrene cone using toothpicks

i dont think you could just stick heavy truffles to the outside of a cake with frosting, and expect them to stay, they would need supports, but the cake would just rip apart if you used it like a pincushion for toothpicks

My other thought is to bake a large round cake and shape the sides and attatch truffles to the sides then when I get to the top of the cake, probably 3 rows truffles then I could make a cone shaped top out of all truffles in decreasing circles??

i still think you would need structural support of some type, as carrying a wedding cake is scary at the best of times, let alone one that with one slight movement could bring the whole stack down. even if you stuck the truffles together with just melted choc, so they set in place, if it was a warm day, you could end up with one big sticky mess

but how about this for pure chocolate heaven?

it looks flash, and sticks with the truffle theme

    afternoon, everyone !

here is my first attempt of a birthday cake im making my son

    http://www.facebook.com/album.php?id=510640285&aid=147403&s=160&hash=8df0968d51d27a077561d5dba5f6dca9#!/photo.php?pid=5045039&id=510640285

    hope you can see it?

anyway, i used one of those cupcake cake tine which makes a massive cupcake and i used the recipe on the back ot the package which i didnt actually get on with very well. i was wondering if anyone else had one of these tins and could advice me on a normal recipe to use for it? (the one i made used eggs and egg yolks and it came out almost batter like.. OH still tucked in though!)

also, i really wanted to ice it the way they have it on the packaging... i guess they do that with a piping bag? i just smeared this butter cream icing on it and although it looks good in the pic, i werent that happy with it

(i just noticed a bakery in london make this sort of birthday cake, and they charge about 35 quid for it! i nearly fell off my chair!)

    anyway advice would be great!
