Hi all
I have been inspired by all your lovely cakes (and motivated by the lack of money in the prophecy_grrl household) to make a birthday cake for my little boy's second b'day in November.
I made a sponge cake recently for the first time and it was lovely, and I ice my own HM xmas cake evry year, so am pretty confident that I can do a half decent job. My only worry is that the cake will go off - his b'day is on a saturday, when will I need to make and ice the cake? I don't want to be doing it on the actual day.
Thanks for any advice

I make sponge cakes with fresh cream in the middle and I usually make my sponges the day before and ice/put cream in middle ont he actual day and store in the fridge. The cake usually tastes fine for the next 2 days I would say. Although mine has fresh cream in so obviously that goes off alot faster!
I would say you would be fine to make it the day before or even the day before that at a push, maybe do it in stages likes I do?0 -

My son is having a Party on Sunday, I'm going to back the bake on Friday and decorate it on Saturday. I am attempting a Swimming Pool cake, so have already made a start on making little people out of fondant icing.

I make cakes days/weeks in advance, let them cool, double wrap in cling film then wrap in foil then freeze them. I defrost them the night before I want them then decorate the next day. I read somewhere that freezing helps to keep them moist which I would def agree with as all of the cakes I've made so far have been really moist and keep really well:)Feb GC £80 per week (Well I'm gunna try:whistle:)

I tried the giant cupcake yesterday - don't think I greased the mould enough as it stuck when I took it out:( I will keep trying though...
I found that the cakes took AGES to cook

Wowee all these cakes look fab! I wish I was that good at doing cakes. I'm ok I guess.
With the giant cupcake does the middle cook through properly thats the only thing thats put me off buying one
