    Hi
I nedd some advise please. At the moment I am using a plastic piping tube but want a really good set for mothers day. I dont know whether to get nylon or disposable bags. I know the nylon can split and are hard to clean so maybe disposable will be better. Also do I need a cupler if so what is it? Would I need one with nylon and disposable? Can any nozzles fit on the bags or do I need special ones for certain types of bags?

Sorry to ask so much although I ahve been baking for quite some time I ahve only been icing for about 6 mnths so have now out grown the lastic tube

    Thanks

Hi does anyone know the difference (except price) between using normal fine glitter and the so called edible glitter? i know your body doesnt digest the edible glitter, and most glitters are non toxic. Just wondering if normal glitter dust would be safe to use as the price of the edible stuff is through the roof.
Also does anyone have a recipe for a caramel cake and icing or fudge?

Awesome2 i use the disposable bags for ease, i have 2 couplers one large one small but dont really find them a lot of help unless i need to use a different nozzel for the same colour icing. couplers basically hold the nozzel on the outside of the bag so you can chnge the nozzel. I also find the dont fit every nozzel i have, some nozzels have a ridge near the top and the coupler wont screw up over it and the large nozzels are too small for the large coupler. they sell them on amazon, have a search and read the reviews. I did try to put a link in but for some reason i cant make it work!!

Question for those who do celebration cakes..... when covering with fondant, how do you get perfect edges - mine are a wobbly mess!!! - here's a pic - 5541885671_7dc052c6f5.jpg

Im thinking I need to find a denser recipe to start with. and make a deeper cake so i can slice more off to level it - am i on the right track?! Oh and this one went and cracked on me and refused to smooth out for me....

I would not be without my smoother now

Also make sure you don't roll out the icing too thin. It can be prone to cracking if it has been over worked ie to colour it. A tip I was given when I did my course was to colour a small amount much deeper colour than you need and then work that into the rest of your icing. You don't get streaks and you are handling the majority of the icing less.

I also use a mini spirit level to get my cakes level before the icing goes on and always use the bottom of the cake to go on top, which is obviously going to be flatter than the top!

Then once the icing is on use the smoother to get a nice shine and use you hands with a dusting of icing sugar to smooth the edges out.
Don't use water at all when sticking things onto icing as it dries shiny and is very obvious. Use vodka which will not mark the icing at all.
    HTH:D

Thank you - will try again with tips on board!
I use a smoother and use the bottom of the sponge as the cake top. Im very likely to be rolling the fondant to thin. i dont like the taste of fondant and that makes me be stingy with the stuff!
    banning water!

Sorry so may questions but I am quite confused.
    Thanks

I had a play yesterday with a bowl of roses. I was really chuffed with it but need to ice closer to the edges of the cupcakes next time.

I haven't got the hang of taking good pics yet tho and don't know how to put them on here. They are on facebook. :(

You could use "flooding" technique. Where you use a thicker version of Royal Icing and pipe the outline, then when that has set you flood it with a runnier version.

Or you could buy fondant icing and use your cutter and stick it to the biscuits. Then pipe on the whiskers?

Here is how to do flood the cookies

    or these

Thanks Esmer :D. I did see the flooding link but I think it looks a ittle too complicated for my novice icing skills at the minute! Plus I have never used royal icing or have the right nozzle. I think I am going to look into practising this for future though :D. I reckon it will probably take abit of practise to perfect.

Fondant icing sounds good :D. I was thinkin something along them lines but didnt know the name of the correct icing. Is this the type you can just buy int eh supermarket ready to roll? And any tips on how would I go about sticking it to the cookie? or do you think it should stick itself?
  • Can anyone tell me how far in advance I can ice cupcakes for an event I am doing on saturday please. The cakes are in the freezer at the moment. Once iced how long do they keep?
