    I used to love those magazines.I don't have them any more although I do have the "100 Best Apple Recipes"

    My mother used to make an apricot torte in the 1970s which contained chopped hazelnuts and apricot pie filling-would that be similar to your shortbread?

    I used to collect these magazines although it was in the eighties rather than the seventies
    really should have a look through them for some new ideas

  • Oh my God just read your post and had a little trip down memory lane. My mum had a little collection and I remember making a holder for them. Many a Saturday afternoon spent making recipes for the family,especially before Christmas, with my mum. Have just checked my recipe shelf mainly inherited from the previous owner of this house and have a copy of the April 1977 H & F but can only find apricot hearts.

    I've found my mother's recipe-it does have a hazelnut shortbread base.

    Rub 4 oz butter into 6 oz plain flour add 2oz chopped toasted hazel nuts and 2 oz caster sugar. Press into swiss roll tin and bake 15-20 mins at 350degrees.

    I'm not sure how she did the topping -all I've got is that she used 1 tin apricots, 1/4 pt double cream and a tin of apricot pie filling!

    Thanks bu it is May 1977 I am looking for, not April. For some reason I can still find the index for that time but the magazine has gone.

    I have a collection of them but I don't have the May 1977 one, sorry! I find them at carboots so I'll keep an eye out for that particular one.....but I hope you find your mag in the meantime!

    Can you post the recipe on here? Apricot Shortcake sounds delicious but not sure if you are allowed to post it on here because of copyright? Maybe someone can clarify this.
  • Has anyone else seen Country Kitchen magazine? I think it has some good varied recipes and ideas - although not everyone has access to game, wants to learn how to shuck oyster or sort out mites in chikens this month! The photos are good and recipes easy to follow or adapt. I tried Salmon steaks with blackberry glaze missed out maple syrup, used blackberry vinegar and didn't bother seiving glaze. Although it's expensive for 1 if you pass it around or ask at the library it will help. It's my treat for 3 am read!:j
