i make carbonara but use reduced fat creme friache and its scrummy
fry off onion bacon mushrooms and garlic - add creme fraiche adjust thickness if needed season serve enjoy easy peasy and i syn it at 2.5 for the creme:j MFi3 wannabee :j

I too get stuck for inspiration and end up eating the same then start to get bored

Could I ask for the SW KFC chicken recipe please? I have cravings for the stuff every time I pass our local one, even though I *know* it is junk (I can't avoid it driving past, unfortunately.)
Have you tried it? Does it taste anything like the real thing?

No I've not tried it yet I only stumbled across it the other day via the minimins website. They all said it was good.... I am with you on the KFC cravings.. my fav fast food outlet. I've copied & pasted it straight from Dietgrrl ( http://the920.wordpress.com/2010/04/21/from-kfc-to-swfc/ ) so they are not my observationsthere are pictures on the link.
SW KFC
1HEb of bread
1 tsp dried mixed herbs
1 tsp garlic granules
1/4 tsp mixed spice
A good few grinds of black pepper
Blend the lot in a food processor until you have your herby breadcrumb mix.
Coat your meat (de-skinned chicken drumsticks works best, thigh is a little too juicy – crisps ok on top, but the bottom is soggy and greasy and you get left with a KFC gravy-type residue in the bottom of the pan/tray) in Chicken Bovril, you don’t need to use tons of it, just a very thin coating will do. Pastry brush if you’re all Nigella, clean fingers will do just fine though.
Once coated, roll in the breadcrumb mixture. I found that three slices of Weight Watchers malted danish with the herbs and spices coated 21 drumsticks exactly. Then bake in the oven on 150-180 for approximately 40 minutes or until golden.

Fragrant Thai Vegetable Curry (I pressume this is for 4 people)
Ingredients
Fry Light, for spraying
1 red onion, thinly sliced
2 courgettes, cut into chunks
1 aubergine, cubed
113g/4oz thin green beans
85ml/3fl oz canned coconut milk (7.5 syns)
198ml/7fl oz vegetables stock (0.5 syn)
juice of 1 lime
salt and freshly ground black pepper
454g/1lb long-grain rice (40 syns on Original used in this recipe)
fresh coriander leaves to garnish
For the Thai curry paste
2 garlic cloves, crushed
1 lemon grass stalk, chopped
1 Thai red chilli, deseeded and chopped
small bunch fresh coriander, chopped
1 spring onion, chopped
1 teaspoon crushed coriander seeds
1. Make the curry paste. Blend all the ingredients in a blender or pound in a mortar with a pestle until you have a smooth paste.
2. Spray a large pan with Fry Light and place over a medium heat. Add the red onion, courgettes and aubergine and cook for about 5 minutes, until golden.
3. Stir in the curry paste and cook for 1 minute before adding the beans, coconut milk and stock. Simmer gently for 15 minutes, then stir in the lime juice and season to taste with salt and pepper.
4. Meanwhile, cook the rice in lightly salted water. Drain and divide into 2 equal portions.
5. Serve the curry with one portion of cooked rice, scattering some coriander leaves over the top.
Just add or substitute chicken for some veggies.
As before let me know how it tastes to see if it has to stay on the list or not

The SW KFC is nice - the recipe i used was slightly different - my OH who is a KFC addict said it wasn't the same - but i loved it and so did my brother!
Can anyone give me any tips on how to survive the weekend - i am working Sat night so
Get up Sat at normal time (9ish)
Go to bed at 5ish
Get up at 7ish to leave by 8
Work until 8ish
Home at 10/11ish - bed
Have 3 hours kip
Go to bed again at 10ish
It roughly splits the weekend into 3! So how do i got about eating heb etc.? Do i stop Saturday at 12am? Or eat free foods for the 1st part and have healthy extras during night shift & treat sunday (when i wake up!) as a 'normal' day?
Any advice will be brilliant x0 -

I tried that thai curry recipe last week. Now don't let me put anyone off, as I am not a domestic goddess by any stretch of the imagination... but....
It was a lot of faffing about, and the end result was quite bland and not worth the effort, imo. Tbh for the sake of a few syns from my allowance, I'd rather use a pack of stir fry veggies and some decent curry paste, and end up with something that tastes more like the real thing. Just my view - I'll be interested to know what other people think.I'm a retired employment solicitor.
