Ok - my method would be to throw some butter/oil in a pan. Fry some chopped up bacon for a few mins, then add some onions (and garlic if you wish). Cook a few mins, then add chopped/sliced carrots and coat with the oils/onions flavours etc. Throw in some lentils and add some stock - bring to the boil and then simmer for an hour or two. I don't really do quantities and would make soup by eye if that makes sense.? SOme people add tinned toms to their lentil soup - i wasn't brought up with lentil soup with toms in so i just add stock/water. Oh and i use orange lentils .
Delias recipe is here but has more faffier ingredients (what i call faffier anyway) , or there is a lentil soup thread here
