  • thanks fror the recipe index bitsy. i'll have a look there now. i dont have any rice or pasta at the moment just spuds unfortunately. could i please have your recipe for sausage and lentil hotpot bitsy?
    luckily i have a bit of spare room in the freezer lol. shock and panic i think is what happened as we dont eat a lot of meat. good idea working out what can be multi-purpose.
    boultdj- i'v never thought of gammmon in a stir-fry.
    i'll try any organise the sundays and what can be used twice. i've not got a lidl/ aldi nearby though, just a tesco metro about 4 miles away. got loads of frozen bread on reduced last week so at least that'll last awhile. there is a farm shop 2 miles away but it seems rather expensive.
    sammy- my cupboards are nigh on empty. i feel like old mother hubbard. I only have loads of spuds, a few carrots, a bag of frozen mixed veg, some cheese, a few different herbs and spices, bread and milk.
    bronnie- i had to tweak my budget to get £40! thats why i'm so shocked that he'd spend that much on meat leaving so little for extras. i next get paid beggining of may. so panicing about only haveing £15.
    i'll go and portion up the meat in a moment. 3 meals out of one chicken sounds good.

  • cooltrikerchick- i told him that under no circumstances was he to spend more than £10! shocked definitely.
  • wow thats a loverly selection of meat, it would easily with good planning last at least two months. if you thrifty with what u add to it bulk it out with pasta rice and lentals. you will be pleasantly surpirsed at what meals you will be able able to make.

    Split everything down to manageable packs, freeze it and dig out your recipe books or search online for recipes.

    as a suggestion for starters, you could knock up some nice pies, casseroles, homemade soups and stews, cold cuts using left overs.

  • thank you. i have found my old slow cooker in the loft it has a 6.5 litre capacity and only works on the high setting. i also have found some sprouts and swede under the stairs (god knows how long they've been there) and they look mostly edible. has anyone got a good recipe for a beef stew in this size sc? a stew lasts about 3 days here and if i stretch it somehow it may have extras for the freezer.

    Depending on their size, you'll get 6 or 8 sausages in a lb. You'll have 12 or 16 in your 2lb. I'd plan 2 sausages for an adult and one for a toddler, thought you could stretch them further by slicing into a sauce :D

    If you're eating more meat than that, you may need to up your carbs and veg. That'll be good for your pocket and your purse.

    When my Mum used to cook her version of the Scottish recipe "Stovies" with sausages she allowed two links per person.

    Brown sausages and onions in a heavy pan in some butter.
    Add a couple of pints of stock/water
    Add a whole load of sliced raw potatoes.
    Add lots of pepper and a little salt.
    Bring to the boil and simmer for 20-30 minutes.

    Ready. Serve with whatever veg is handy.

    My beef stew would be beef, tossed in flour (put flour in plastic bag stick chopped meat in it and shake), add root veg you have, onions, carrots, chopped swede - whatever. Add hot water and a couple of stock cubes and a good shake of mixed herbs.

    If I'm feeling keen, I seal the meat and fry off the onions etc. but otherwise I don't bother!

    Don't put too much water in if you're slow cooking.

    I know he spent more than you wanted him to, but your OH got a really good deal. Don't beat him up about it, he tried.

    It may be hard to stretch this month if you don't have many basics or veggies in, but as others have said, you've got a good deal and the meat should last you a long time. So if you can be creative with veggies this month (yellow stickers/market at the end of the day etc), then encourage your OH to see whether next month he can find a bargain on bulk rice/lentils or a sack of potatoes, carrots or onions. If you can gradually build up a store of basics, then you'll be in a better position to be flexible and take advantage of these kind of bargains.

    Ok for pastry: Half fat to flour, so 200g flour 100g pinch of salt whizz in a food processor or rub in with cold hands (run them under the tap first then dry them so they are cold) not long just until it looks like fine breadcrumbs add enough water to bind the pastry. chill in fridge for about half an hour and then roll and cover a flan dish and bake in the oven with some dried beans or pasta weighting it down (blind bake it put some parchment on the pastry firstso the pasta or beans don't touch it directly that way you can use them again) gas mark 4 for about ten mins

    In a bowl whisk 4 eggs plus either a splash of cream or a splash of milk and add bacon lardons, cheese onions and any veg you fancy- thinly sliced and fried off potato, broccoli (i usually use frozen) etc plus a wee bit of salt and pepper

    When the pastry has baked for about ten mins remove the parchment and the pasta or beans and pour in the egg mixture and return back to the oven for about 30 mins.

    Eat hot or leave to cool yummy!

    Oh wait forgot if no pasta or beans, just !!!!! the pastry with a fork a good few times to stop the bottom rising and bake in the oven for 10 mins without the parchment
