I've read the honey one and I've not got the right flour for it either so with 2 substitutions I'm thinking it's looking less ideal. The first one you mentioned though looks possible, the only thing I'd need to swap would be to use normal sugar not caster sugar. I'm interested to see happy35's oil one too, just in case that didn't require any subsitutions at all.

Thank you both loads, especially considering how fast you got back to me.

  • Your welcome! Hope it turns out OK whichever you do - if you have a food processor you could always whizz up your granulated sugar to make it the same texture as Caster sugar, the only difference between the two is that caster is finer than granulated - I rarely buy caster sugar and also put it in a box and keep a vanilla pod in it for a few weeks before use for added flavour as that is what my Gran used to do:)

Oooh, never thought of that, I have got a processor with a little spice grinder so I bet that would make short work of sugar.

I love it. I was writing a great long reply but then decided it might be better to put it in a new thread actually, so I shall.

There is this recipe for Eve's pudding that may suit you (a sponge pudding with apple). Or this apple cake if you don't have so many apples.
Enjoy the little things, for one day you may look back and realize they were the big things.
