    Could you find a recipe for apple cake and experiment with spices until you find the right flavour?

    i've never had it, so can't try to replicate the recipe.

    my guess though would be 3 eggs, then the same weight as the 3 eggs in butter or spread, sr flour, and caster sugar. For the apple bit i would buy or pick about 5 dessert apples, fry them off in 2oz butter or spread and 3 oz sugar (put the sugar and butter on to simmer, peel and core the apples and put them in and mix as i continue to core and peel the rest, then when the sugar butter bit starts to go caramelly (when most of the liquid has gone), i'd put this mix into the bottom of the lined tin, then put the sponge on top, then bake for an hour at 160. for the spice but you could add cinnemon or garam masala to the apple mix as it cooks. This will give you a cake which is sticky and fruity at the base and spongy on top, if you wanted the fruit through the cake more, then it would need to be chopped smaller. hopefully then it would not sink!

    if you try this and it isn't right, if you post how it isn't right then i'll post some suggestions on how to alter the recipe.

    I never been to Costa or tried their cake, but I like to bake this Spiced Apple Cake. It's tasty and easy to make

    I haven't had Costa's either, but this is the apple cake recipe I use which is similar (but better, IMO) to ones I've had from other coffee places. Makes a huge cake with lots of yummy cinnamon. :j

    Edit to add: It's an American recipe, so here are the approx weight conversions in case you don't have cup measures...

    Apple mix:
    6 apples
    1 tablespoon cinnamon
    5 tablespoons sugar

    Cake mix:
    2 3/4 cups (350g) plain flour, sifted
    1 tablespoon baking powder
    1 teaspoon salt
    1 cup (250ml) vegetable oil
    2 cups (400g) sugar
    1/4 cup (60ml) orange juice
    2 1/2 teaspoons vanilla
    4 eggs
    1 cup walnuts (I never measure this, just scatter in a handful on top if I feel like it)

    Big thanks for this. Am on a vegan trip at the moment and had resigned myself to no cakes etc but this may well revolutionlise my life if I use an egg substitute :rotfl:!

    :rotfl: You're welcome! I'm lactose intolerant, so it's always nice to find a good dairy free cake. I'd try it with a flax based substitute - I think the flavour would work really well. I actually have a packet of ground flax in the cupboard that I've been meaning to try with this recipe instead of eggs. I like veganising things as well. :)

    On a semi-related note, my friend swears by these vegan vanilla cupcakes - and she's not even vegan! I haven't tried them yet, but they're on the list for when I feel like a vanilla cupcake.
