The recipe looks fab ... can I just clarify what type of apples? Are you using cooking apples or regular eating apples?
If regular eating apples, which variety is good?

To be honest I have made it with whatever apples I have around. Cooking apples/bramleys are great as they keep their shape longer so you have actual soft lumps of apple, but I have thrown in coxs or gala or anything I had in the bowl.. they all taste lovely!
I think my aunty used to buy cooking apples for it if that helps and actually she never used spices in hers, those are my additions over the years as I much prefer it with cinnamon etc.

Hi folks,
I drive for a living and so with that comes service station stops and coffee and cakeTrouble is this is getting expensive, something i really cant afford, so i narrowed down my favourite and it comes to rest at the spiced apple cake from Costa Coffee. I would love to try and replicate this recipe to take with me for elevenses on the road and hopefully save me money. I cannot find a recipe at all with any reference to Costa Coffee spliced apple cake, can any of you kind people point the way??
