    Hi all

    I've been hunting for Kaz's Welsh Cakes recipe but can't find it...can someone point me in the right direction please?

    In the meantime I'm going to make a carrot cake yummy!

    i've just cleared out the cupboards over my wardrobes (i live in a victorian flat so they are huge and used to be full :D) i now have a pile of xmas and halloween stuff to chuck/charity shop, dont think any of it is good enough to ebay, probably wouldnt cover fees!

    i also dragged out my old uni stuff, i may need some of it at college, or at least i can steal folders etc to save me buying new ones. the cupboards look mush tidier now! and i feel a bit better having done SOMETHING useful today!

    the good news is i appear to have enough xmas cards/wrap/bows/ribbons etc to do me again this year so i won't have to buy any :j i really am becoming worse than the shops this year, i spend so much time thinkin about xmas now!

    anyway time to wind down for bed. hope you guys are all groovy tonight, see you all in the morning x

    I can't remember where or when Kaz posted her recipe, and as she's gone off-line, I'll take the liberty of putting it here Snowy!!

    225g SR flour
    spices of choice cinnamon, nutmeg or even as I do sometimes nothing
    110g butter
    1 egg
    good handful sultanas ( or omit and spread with jam )
    85g caster sugar
    possibly a little milk
    extra butter for greasing


    Rub fat into flour and spices to make fine breadcrumbs.
    Mix in sugar and fruit. Add beaten egg, mix to combine, should form a ball of dough. If too dry add the tiniest bit of milk, but be careful easy to add too much. ( to be honest Snowy I've never had to add any)
    Flour a surface and roll out dough to about 1/2 cm thick ( think I do mine a little thicker) Cut into rounds 3-4 inches diameter. ( I use a cutter 3inches to get more out) Use a fluted cutter or an ordinary cup ( I use a plain cutter, never had a problem)
    Lightly grease griddle, heat griddle ( I use non-stick frying pan) and start to cook. 2/3 minutes each side to become caramel colour. Lightly press centre, very squidgy - not done, slightly squidgy just right. Cool on rack. Sprinkle with caster sugar. ( I don't always do this, they're quite sweet enough for me without)

    Snowy the bits in brackets are mine not Kaz's. My lot just adore them!! Never had a failed lot.

    I can see I failed by 2 minutes Snowy, but I'm leaving this up. Too much work invested to delete it !!!!

    Not quite sure when I will complete - the target is to exchange by the 18th but I reckon that'll happen sooner (fingers crossed). Current place costs next to nothing thanks to landlord/housemate being a VERY good mate who doesn't need the money, so no probs there!

    I really can't afford the time off work to "move properly" until around the 26th, so assuming everything goes smoothly, I should have the previous weekend to pack and then take some time off work around 27/28/29 (though I have a work social on the eve of 28th, and don't have the following weekend free as am going to a wedding on the 30th!)

    Biggest logistical problem is likely to be the small matter of getting the items delivered that I don't already possess. Obviously as I don't actually own my own fridge freezer, I'd particularly like that to be there by the time I move for good!

    Churchmouse you have not failed!! You are a superstar for going to so much effort! I was looking to make something - and did the carrot cake tonight. I've heard so much about the Welsh cakes they are going to be the very next thing I make. Now I know what I will need to buy (just eggs...store cupboard is well stocked) - will be making these on Wednesday as I have overtime tomorrow evening.

    Catowen thanks for looking the recipe up for me too, I really appreciate it.

    The carrot cake came out fantastic...though it was supposed to have two eggs in but I only had one left. It a bit lighter in texture and the taste is well up to its normal dizzily high standard so maybe I've stumbled across an OS way to save an egg.

    I shall put Kaz's Welsh Cakes recipe in my Pukka Pad immediately!

    Snowy Tilly seems on the mend...she's still got a bit of a runny nose, but she's eating well and very lively! I haven't forgotten that I owe you a pm.:o I just haven't had a minute this week....I have 101 questions for you.:o

    Today wasn't really very OS here.....made some fifteens with DS2, tidied up a bit and made lasagne for tea, but that's about it. My daughters GCSE results are out tomorrow, so I've been a bit on edge about that....silly really because there is nothing I can do about it now. Please keep your fingers crossed for her.

    Morning all, is no-one up yet?:D

    Made lovely rice pudding in the sc last night, will have some today, am making mince tonight for tomorrow, quite fancy making meatballs, does anyone know of a recipe?

    Then brisket to be done for sunday as mil is coming for tea, as its her bday on saturday.

    Lo slept a bit better last night, ds2 woke up not feeling well, so not sure if he will go to school today, will see how he is when he wakes up.

    Paying off deposit today for florida today:j going next october, have to get lo new clothes, he is now needing 18-24 clothes!

    Tesco shopping today, maybe go to farmfoods if we have time.
