  • Hello, Pooky, it was me!! :hello:

    Cream of Courgette Soup

    2Tbsp olive oil
    1Tbsp butter
    1 medium onion, roughly chopped
    900g courgettes, thinly sliced
    600ml veg stock
    120g dolcellate cheese, chopped + extra to garnish
    300ml single cream

    Heat oil and butter and sweat onion. Add courgettes, cook over low heat 10 mins. Add stock, bring to boil, cover and simmer for 30 mins. Add chopped dolcellate, and stir until melted. Whizz in processor, and sieve if necessary. Add 2/3 of cream and bring to hot but not boiling. Season. Swirl with remaining cream and cheese.

    I actually couldn't find the dolcellate I'd bought :mad: , but can report that it was lovely without :D DS has even been asking for more of this "veggie food" :eek:
    Do you think it would be ok to freeze this??? :confused:

Two fat old ladies plodding side by side on treadmills:o :D

    Don't see a reason why not, but I'd leave out the cream and cheese, and add them when I came to serve.

    i have kids running through my back garden and trashing the place, told them to get out and got a face full of cheek. what in hell is the world coming to when thats the next generation???

    so much for my getting out today, i'm now waiting in hope that the police turn up this time, preferrably with a shot gun! how long should i wait for the police to come? i don't wanna be stuck in all day. :mad:

    Goodnight all,

    Just back from my walk with DH. Decided to give Hammy a break and go all patriotic for a little while with Kanga. It was suppose to jump but somehow it's stopped. :D Probably needs to go to the gym with Churchmouse.

    Today is *the* day Bgn Rzl isn't it? Hope it all goes through.
