Butter Tablet Recipe Please

    So, did I cook it too long? Or too short? Or not beat it enough?

    How did you make it-times etc?

    Even though the ingredients for tablet and fudge differ,to make fudge,you have to beat it for longer,otherwise it will have a tablet-like consistency.

    Ikg sugar (i used demerara cos I had 2 kg to use up)
    100g butter
    400g condensed milk (hm)
    1 cup milk

    Melted all in saucepan, brought to boil. cooked til it reached 116/240. Removed from heat and beat with wooden spoon for maybe 8 mins. Was starting to thicken. Recipe said to beat for 2 mins, fudge recipe for 10.
    Poured it into baking trays and cut it when almost set.

    I don't know if the demerara sugar would have made a difference,but the above is a tablet recipe!
  • Sorry,forgot to add:my (whisky) fudge recipe is:

    -300ml double cream

    -250g unsalted butter

    -250g glucose

    -1kg granulated sugar

    -2 to 3 tbsp whisky (optional)

    So,quite a difference ingredient-wise.

    OOPS!!!!!
    Just looked again at where I had scribbled the recipes and realise that the fudge recipe is the same but with 1lb of flour, not 1 kg!!! No wonder the bloomin' stuff is so sweet.
    So, I definitely made tablet then. Apart from eating it, can I maybe use it to make banoffi or something? Or millionaire's shortbread? Or would that not work?

    Just cross-posted there. That is a massive difference in recipes. The fudge recipe I got from here somewhere was the same as the tablet recipe but just about 1/2 the quantity of sugar. No double cream.

    Might give your fudge recipe a go (Apart from the whiskey of course!). Does it end up nice and squidgy? Or dry?

    Are you sure that the fudge recipe has flour as an ingredient?Sounds a bit strange to me....

    The ice cream idea sounded nice.Maybe you could have it with custard.I don't know if it would work with banoffee pie.

    ETA I've only made it once.It was nice and soft.Do you want the whole recipe,ie how to?
