  • just read another post! freeze stuff then pop into freezer / food bags! love it!!

    Is cheese ok to freeze then? do you need to grate it first?


    I grate it first, then tray freeze to ensure it is loose and then bag it up once frozen. Just shake it onto pizzas, toppings, toast and straight in the oven/under the grill.

    I also buy mozzarella on special and slice it up, tray freeze then bag it up.

  • If you make something new I reckon it's always worth trying to freeze a little bit to see how it is. Personally my freezing failures have been risotto (texture was really weird) and soup with a potato base...but most things freeze well. i freeze a lot of lentily dishes and they freeze great!

  • If I make a chilli with frozen Quorn mince can I freeze any leftovers even though it says do not refreeze on the bag of Quorn? I get easily confusedby all this!

    Want to start making soup have not got a very big freezer so do not really want to freeze soup as such but was thinking of preparing batches of prepared mixed veg eg onions carrots green beans celery peas in the freezer would I have to do anything to them prior to freezing or could I just chop and throw n freezer bags also could I freeze mushrooms thanks in anticipation Kathy

    Mortgage-free Glee!
    I do the following:

    - Sliced sweet peppers - open frozen first - add frozen to bolognaise, soups or curries
    - Sliced lemon/lime for my G & T's! - open frozen first
    - whole chillis - just freeze uncooked
    - Peeled ginger
    - Sliced, dry fried slices of aubergine (ready for moussaka) - also open frozen
    - Herbs I haven't had a chance to use (fresh ones in their bags then just crunch up when I need to use them
    - home-blanched portion bags of brussel sprouts, carrots, turnip, parsnips, swede, spinach, sliced mushrooms, (this is because I dont' have the room for shop bought large bags of these)
    - raw: mange tout, baby corn, asparagus, corn on the cobs, chopped celery

    Have a look at this post about freezing finely chopped veg. I've found this immensely useful not only for starting off a soup (and then adding larger veg like chunks of potato, beans, lentils etc), but also for starting off pasta sauces and stews.

    Thanks thriftlady loks like I will be doing a lot of chopping after visiting my local market tomorrow there is usually a stall selling really cheap fruit and veg but always looks as if it needs using fairly quickly:A
