  • DH and I are doing our best to cut down our shopping bill. We're supposed to be having WeightWatchers Moussaka tonight which is made with sliced aubergine. However, things are panning out such that there isn't time to do it ... so I was wondering, if we sliced up the Aubergine and bunged it in a pot or something can we freeze it?

    Many thanks you wonderful fonts of all knowledge ...
  • According to my 'how to freeze' book;

    slice more thickly than you would usually (about 1cm), blanch unpeeled slices for 3 mins in boiling water with 1tbsp lemon juice added.
    Drain, plunge in iced water to cool, then drain and pat dry on paper towels. Spread in a single layer and open freeze until firm, then pack into bags etc.

    Will store for 12 months.

    To use, cook from frozen in boiling, salted water for about 5 mins or alternatively thaw, then fry in oil on each side until golden.#

    Thanks angie loves veg,

    I didn't know that aubergine could be frozen. I've added this thread to the main what can you freeze thread as it helps others to find the answers easily.

  • Hi

    I need some help before I go to bed.

    I have made a pie today using frozen puff pastry, frozen homemade stock and left over chicken from yesterday's roast.

    Can I freeze what is left of the pie????

    Just a quick question guys, I have just moved in on my own and am finding it very hard to cook for one, so reading through here I figured I could take your advice, cook it like normal and freeze some of it - but i'm really unsure of what you can and can't freeze, I love pasta bakes and stuff but can that be froozen?

    any do's and don't for cooking and freezing?

    THANKS

    Hi MinniMe,

    There's a thread on foods that can and can't be frozen that should help so I've added your post to it.

    This older thread might help too:

    Once a month cooking (freezer cooking)
