    chicken pasta

    chicken, pasta, red onion, red peppers, spring onions, cherry tomatoes, fat free salad dressing, tarrogon or parsley to your tastes...........delish!!!

  • I know what you mean about sandwiches and salads, they can get a bit boring. :(

    I like to take HM soup to work, often a mixed veg version, which I make with carrots, onions, celery, peppers, whatever veg is looking slightly tired in the fridge really! I fry them for a couple of minutes and then add some red lentils, veg stock and 2 tsp curry powder. Simmer for 20 mins or so and then liquidise. Yummy, low fat and one or more of your five a day!

    I also like to take couscous-based salads, making up couscous with veg stock and adding some harissa roasted chicken, spring or red onion, peppers, cucumber, tomato - whatever you've got hanging about.

    My other favourite is HM ready meals. I make big batches of stuff (I've got healthy lasagne, chilli, bolognese sauce, chicken tagine, veal cannelloni and pasta florentine in there currently) and then freeze it in individual portions, which I sometimes have for dinner and sometimes take to work to microwave for lunch. If I eat them at lunch then I can just have something light for dinner.

  • Couscous - salad, I get the flavoured couscous from Aldi which makes 3 lunch portions and add tomatoes, peppers, grated carrots or whatever else I have... it's delicious!!!
  • I pretty much always have leftovers for lunch, heated up in the microwave. But I do also enjoy HM homous and taziki with value pitta, a few carrot sticks and olives.

    take a jacket potato and microwave - you can do it most of the way at home and wrap up, then micro for last couple of minutes at work, then add topping of your choice. Cottage cheese, tuna, chicken mayo, small tub of beans (microwaved) or something like leftover chilli or bolognaise.
  • This has become an important issue for me , and I would like to hear what others do. My GP has told me to eat "more during the day ,and less in the evening" (weight gain after health issues that have stopped me exercising). Plus I am trying to spend less, working in central london sandwich bars etc are stupidly expensive. I've been trying to find info about "healthy packed lunches" online, but all the books and websites I find are aimed at school childrens food .

    Hi all
    I usually buy Ainsley herriotts coucous 2 for £1 at Asda, make 1 up and it can last me 2 days, adding whatever else i have laying around.

    i also put a cup of rice, frozen peas and frozen sweetcorn in a saucepan, cook for 20 mins. This usually lasts for 3 days lunches for me, again i add whatever i have that needs finishing up.:j

    Hi. I have been very good over the last year and have been taking a packed lunch to work every day. I'm a parcel courier so I get plenty of opportunity to buy stuff from garages and village shops, but I have 'upped the ante' by not taking any cash or cards to work.

    I think my lunchbox is fairly healthy(ish), but I sometimes get a bit bored or find that I still need something to eat. I often use chewing gum to give my mouth something to do!

    My lunchbox normally contains:

    1 apple, 1 satsuma, 1 pack of French Fries crisps, 3 small choc wafer bars, and sandwiches (using 4 slices of bread);

    My wife has also started baking flapjack for me to take for breakfast ( I leave the house at 5am), and I take a flask of coffee.

    I have saved loads of money from doing this but would appreciate any new ideas for things to take.

    Hi,

    You could make wraps with Chicken, Tuna etc as an alternative to sandwiches or salads with meat or cheese or pasta salads. Homemade quiche would be a nice thing to take to work each day especially at the moment with the nicer weather. If cold, then soup in a flask with some bread, which is quite filling.
