I have quite boring lunches compared to lots of you! I have cucumber sticks and cherry tomatos, a piece of cheese (darylea tribites atm, YUM) and two ham crusty rolls. In the summer i'm more likely to take in big salads (made up of: lettace, toms, cucumber, peppers, artichoke/cold asparagus/cold roast veg, maybe coleslaw and then something like egg mayo)
But i also have a draw at work filled with fruit and cereal bars. We have a microwave and toaster at work and because i get in so early i tend to eat breakfast there too - crumpets.

My top tip for packed lunch is.. if you take soup, buy a flask just for soup. Yesterday I was accidentally introduced to soup flavoured tea. I really wouldn't recommend it!!Say what you mean.. mean what you say... without being mean.0

I saw a food flask yesterday that says it keeps food hot/cold for up to 12 hrs! I'm considering in investing in one for No1, as sometimes the microwave-ing option just isn't there. For anyone interested, it was in Dunelm Mill & was priced at £14:99. Can't recall the make, but it could have been Stanley.Full time Carer for Mum; harassed mother of three;loving & loved by two 4-legged babies.

Invest in a slow cooker if you dont' already have one....make food in bulk and then store it in the fridge/freezer in portions in those microwave-safe plastic containers. Examples: Make a casserole/stew. Or use the oven and make a lasagne/cottage pie. Needless to say you can make veggie alternatives (Quorn instead of meat, or just padding veggies like marrow instead of meat. Then you just need to micowave it at work, add a slice or two of bread and butter and it's a healthy, hearty meal.
I like to make sandwiches and/or cold pasta salads in the summer.0 -
I've recently started experimenting with cold pastas (I usually like mine warm) and have really been enjoying these two, both made up as I went along and easily changable:
Pesto past: pasta, pesto, chooped cooked spinach, pinenuts, peas and 1 hard boilded egg (or scrambled). This does OH and and Ia couple of days, depending how hungry we ear!
Hammy Mayo Pasta: Pasta, quite a bit of mayo, pepper, peas and sweetcorn, small pieces of cured gammon / ham./ bacon... anything sweet and smoked really. This doesn't last us very long, whoops :drool:April 2021 Grocery Challenge 34.29 / 2500 -

1 packet of cous cous between 2 (sachet ones but prob cheaper to make own if have time) cost under 40p mix with some pesto and throw in some olives (We buy massive jars from costco) 1/3 of a quiche each (always but them reduced in supermarket for 20p-£1 and cook the night before) and then some baby spinach leaves thrown on top if we have any. sachet cous cous is just normal cous cous with seasonings!
if you buy the plain stuff, just put it in a bowl with boiling water, stir, cover and it's ready in 5 mins.
I generally put in some stock powder and whatever herbs i fancy for general flavouring, and then have it with whatever you'd usually have a sachet one with - i tend to go for finely diced veggies (grilled if i can be bothered) and a bit of pesto like you.. yum! (you'll have to look up the amount of water, i just go by eye now).0 -
I don't know about lunches for work some of the ideas here sound yummy :j I'm going to start making some of them for myself to eat at home and they'll come in handy for the kids to snack on too - especially the permamently hungry boys :rotfl: Thanks everyone for the ideas.0

Try the "plate pie" thread. Lovely for a lunch box instead of sandwiches. The pies could be made on a saucer, giving an individual serving, if you dont want to take a slice.0

Thanks for the ideas. Part of the problem is that I don't always get time to actually stop for lunch, so I slowly work my way through the lunchbox throughout the day.
How about homemade sushi ??
It really is the utimate finger food, without the "having to find a fork" faff.
I normally make either veggie or prawn sushi... but it really is up to you what you put in it.
The supermarkets even sell the basic ingredients....

Sorry, can't stand sushi. I just don't 'get it'! As for veggie sushi (raw vegetables made to look like raw fish)- what's that all about!!??
