I've got a couple of lamb chops in the freezer that I've got planned for a meal this week. I'd quite like to do a 1 pot meal in the slow cooker, partly because I love coming home to cooked food, and partly because I want them to be super tender. So has anyone got any storecupboard ideas about what I can do. Veg wise I've got some leeks, onions, garlic, potatoes, peppers, in the freezer I have squash, perhaps some carrots and some cellary. I've got various herbs and spices and stock cubes in the cupboard - no mint sauce though although they chops are pre-minted.
Inspiration would be appreciated. Oh and swedes were only 20p in aldi yesterday so I wondered about buying one. They're the ones you cook with carrots and then put in the blender aren't they? Would you do one swede with a bag of carrots or more/less carrots?

I've generally found that the best way is not to think too much about it!
I would chuck them in with some chopped onions, a tin of chopped tomatoes and a variety of leeks, peppers, carrots, garlic, potatoes and just some dried herbs. Put some stock in and just leave it to cook.
Swedes you can boil, mash, roast, put in a 1-pot, pretty much anything :-)
Lamb chops are nice cooked slowly with chopped tomatoes and then put over some nice mashed potatoes - or mashed potatoes mixed with mashed swede / carrots etc.0 -
cheers for the advice treelike, I'll bung it all in tomorrow morning and see what comes out at the end of the day.
I think I'll get myself a swede and start experimenting more with veg I've never really used before.0 -

I did lamb chops in the slow cooker, and they were lovely. I used 6 chops, 1 tin of tomatoes, 1 stock cube, 1 cup of green lentils, 1 clove of garlic, 1 onion and half a cup of posh flavoured vinegar 1 got for xmas, or you could use red wine vinegar, cider vinegar or wine.
Yum. Only problem was i wished there was more left over! When i do anything in the slow cooker my boys devour it like nothing else:)Member no.1 of the 'I'm not in a clique' group :rotfl:

I envy you because when I do stuff in the slow cooker my daughters go "yuck" and turn up their noses.
I like the stuff and so does my husband as he keeps haunting the slow cooker hopefully and looks so disconsalate if it is empty that I feel quite sorry for him."This site is addictive!"

Love swede, must be my favorite winter veg. You can cook it with carrots or without - you don't need to put it into the blender, just a potato masher will do. As for quantities for the mix, it doesn't matter as there's no fast rule. It's nice sprinkled with black pepper and/or nutmeg.
Another way to cook it is to slice it with other root veg (parsnip, sweet potato, potato, carrot, etc) add rings of onion and stock just to cover then bake in a casserole dish (or slow cooker) until tender. Instead of stock you could try using a thin soup instead. Real comfort food!!
Something else to do with swede - if you make a fish pie, divide the mashed potato into 3. Mix one third with parsley: one with swede or carrots and leave the other. Then top pie with blobs of mash, artistically arranged! Looks super - really appetising.
Didn't think you could freeze celery because of it's high water content but I could be wrong and it may be fine for cooking.

I always mash swede with the potato, we call it ponsh meipe
I do it half and half and think it's healthier to use less potato'

I always do leg of lamb in the sc - when reduced of course -it is beautiful0

Yep, found the slow cooker and lost the recipe book that came with it........ As I remember it it is the meat that takes longer to cook ? Anyway if I was to bung in the ingredients for a bog standard casserole how long would it take ? Advice please ?0

A lot would depend on the size of the meat pieces and the type of meat, but a rough guide would be 6 - 8 hours minimum. You can leave it for longer if you need to.
