My plum tree died 2 years ago and although I planted another one I don't have enough plums on the babybtree yet, about 6 I think. I really miss my old tree and I don't know anyone who has one.

Plums will turn back when thawed out after freezing - still OK to eat but look a bit odd.

I bottle plums using pasta sauce jars. These hold their colour and it saves room in the freezer.

    Plum chutney is good too.

I made plum chutney today using this recipe: http://www.waitrose.com/recipe/Plum_and_Apple_Chutney.aspx and will be making plum jam tomorrow using this one: http://www.bbcgoodfood.com/recipes/11750/angelas-flexible-jam-recipe (made blackcurrant jam using it today).

    Hope that helps!

Oh, thank you, have printed out the jam one, will give it a go :D

Thats a shame about your plum tree dying. How do I preserve them in pasta jars? do I put them in whole and raw? what do I preserve them in? thanks, great idea :D

Yummy, I think I will get cracking with that whilst waiting for some other ideas. How long will it keep in the fridge that way?

No idea I'm afraid...I'd guess 3-4 days but they never last that long. :o Hoepfully someoen else will be along who knows for sure!

Here is a website with clear and easy to follow instructions. I use the 'Moderate oven, wet pack method' but only because this is the way my grandmother showed me, I'm sure the other methods work very well. I tell myself I will try one day.

Just a word of warning, please be very careful when removing the hot jars from the oven, the pressure can build up and if it sprays out it is hot and sticky and will scald worse than steam:eek::eek: Follow the timing on the chart and it will be just right.

I use big jars. Fill jar with the fruit, packing as much in as possible without bruising it, add the syrup. Put the lid lightly on the jar DO NOT SCREW DOWN OR IT WILL EXPLODE!!!!! Just rest it on top without turning it. When the fruit is cooked open the oven door and leave for 2-3 mins. Then take the jars out an place on a wooden chopping board (not on cold surface or it might break) Screw down the lid. The safety button should go down. Tet in the morning. If it has it will last 2 years, if not repeat the process or eat straight away.

Hope this helps, but be careful!

    Thanks everyone :D
Looby-loo, that looks wonderful, but I fear it may well be beyond my capabilities, the risk of blue lighting it to hospital is rather large, so I don't think I will try bottling, I have bookmarked the link though, it looks like a really good one :) Thanks for explaining how you do it, and for the warning.
Butterfly Brain, drying them in the oven sounds like a good idea, do you have any links or guidance as to how to do it please?

Well, I have a pan of jam on the boil now, will need to go shopping for more sugar to do more, also will do the stewed breakfast plums in the morning I think, as I did a big batch cook this afternoon (which is why I have no room left in the freezer lol), and have run out of pans. Looking forward to it, sounds lovely :)

I was thinking of freezing as my neighbour who gave me the plums suggested freezing them to help with the mashing process for wine, not sure how it works though, as I have never mashed fruit to make wine before. Also, I do batch cook fruit and portion it down into the freezer ready for crumbles and pies and such. I really think I need a second freezer, a small one with 3 trays isn't enough for all the cooking a freezing I do for our family of 5.

    Hi All

I am going fruit picking in a couple of hours and will be picking some victoria plums.

I plan to make some plum jam, and wondered about some other ideas for inspiration.

I am also going to make plum ketchup but I can't decide between the WI recipe, the delia recipe and the Thane Prince recipe. Has anyone tried any of them?

    Thanks

Over the past couple of days I have made plum chutney, plum jam and plum and cinnamon oat slices http://www.deliaonline.com/recipes/galleries/late-summer-fruit-precious-stones/plum-and-cinnamon-oat-slices.html. I am also going to make a plum crumble.

Have never made plum ketchup though sorry.
