Intended to have fish last night, but money bit tight this week so made do with what was in the cupboard and ended up with HM pizza with pasta bake. Tonights looking like its going to be clear-out-veggie stew

Wish this weather would improve, it's hard to motivate myself to go walking when its dark and wet outside

wel..... I meant from the fridge clear out, but yes I guess all that old veg could have an undesired effect bodywise! Can't see that title appearing on the menu at posh nosh dining can you? Clear Out Veggie Stew .......... (was actually very nice)

Clear-out stew - like the double meaning!

last night I met OH in pub so not very good on the calories and didn't do the curry any favours as I hurried it and it turned out a bit watery.

                    Today:
                    B: 2 toast with spread & honey
L: french stick with coronation chicken
                    S: f/f yogurt
                    S: crisps
                    D: beef stew & veggies

Reading that back its not very diet friendly at all!

need to get lunches sorted out again, but I've had enough of soup for the mo.

Was chuffed with myself yesterday as I spent 3 hours in the garden clearing out and feeding a bonfire. Couldn't believe it when I realised that I had missed my lunch as I had been so busy and thinking of all of the calories I must have used up! Great, until OH suggested tea in the pub on the way home from his work. The beef pie and chips were lovely....:o:eek:

In this month's Good Food mag (and on their website) there's a nice recipe for Haddock, I made it the other day, though with Cod, and it was lovely. I didn't have capers so I used chopped up green olives and used spring onion instead of chives!

I've got some of this cooking at the moment and thought I'd share the recipe, I've been losing weight this year (nearly a stone since Christmas) and I have had this quite a lot so it must be pretty healthy. Can't remember where I got the recipe originally but I have changed it a bit.

                    Ingredients
around 250g red lentils (half a bag)
Tin of tomatoes (whole or chopped)
                    Tin/tube tomato puree
                    Onion, celery, garlic .
                    tsp ground cumin
                    tsp ground coriander
                    Veg stock cube and water

                    Method

Fry onions and celery gently in fry-light or a little olive oil, until soft, add the garlic and spices and fry off. Rinse lentils under water then add to the pan with around 3/4 pint of veg stock and the tomatoes and puree, cook for around 20 minutes until the lentils are soft. Blend. It varies in consistency depending on how much liquid I've added but I prefer it thick.

This is filling and tasy, makes a great lunch or supper.

                    Yesterday:

B: About half a slice of white toast + black coffee
L: 2 rye crispbread with garlic herb tofutti spread + 1/4 baby avocado, tea with rice milk.
D: Bowl of vegetable soup and about a 2" square piece of stottie.
S: Cup of tea with rice milk and pear.

                    Today:
Brunch: 3 vegetable nuggets, about 3 heaped tbsp baked beans and a 4" piece of stottie with sunflower spread. 2 cups of tea and a small square of hm peanut butter flapjack
D: Sun-dried tomato, olive and spinach stew with coucous or polenta (not sure which, leaning towards polenta but hubby will probs want couscous.) Glass of hm fizz.

                    Tomorrow's plan:
B: Cup of black coffee and pear. Will aim for rye crispbread or a banana smoothie ideally, but knowing me... :p
L: Tofutti Mozzarella slice melted on wholemeal toast + cup of tea with rice milk.
D: Bean Curry with Pilau Rice, probs with another glass of hm fizz if tis pleasant :D
Love and compassion to all x
