hmmmn will do further research! I'm hoping some kind of oat cake for having at lunches with the tangy bean pate and nut butters will also use up a fair bit of it, and I also wondered about the bread being a kind of oaty enriched loaf?
Think I need to add more pumpkin seeds to my list....

Have uploaded a piccie plus amounts for a vegetarian version of the risi e bisi but I think I over frugalised it... Still I have high hopes for future tweakage

Soft Oatmeal rolls
scant 2Tbs yeast or 2pkgs
1/3 cup warm water (120-130 deg.)
2 cups water
1 cup dry oats
3 Tbs butter
2/3 cup brown sugar
1Tbs white sugar
1 1/4tsp salt
5-51/2 cups
dissolve yeast in 3/4 cup warm water,set aside.
if using pkgs. you may be able to skip this part and put it in with the flour.
Bring 2 cups water to a boil, add oats and butter. Simmer for 1 min.
Pour oats into a mixing bowl. let it cool a bit.
add sugars,salt,yeast mixture,and half the flour. Mix well.
add enough of the remaining flour to make a soft dough.
turn onto a floured board and knead for 6-8 minutes until smooth and elastic
add additional flour if needed.
Place dough into a greased bowl turning once to grease top. cover. let it rise until double in size (about an hour)
punch down dough.
divide into quarters.
shape each quarter into six balls (24 in total)
Place in a 9x13 inch baking tin evenly spaced.
cover and let rise till double(45-60 min. approx.)
bake at 350f preheated for 20-25 min.
these rolls meld together while baking. pull apart to serve.
My Notes
These rolls are sweet.
these are some changes I tried...
I used wholemeal flour.
I also only used 1 pkg of yeast and it took far longer to rise in my freezing kitchen so will try 2 next time and put it in dining room to rise.
Plain rolls Leave out all except 1 tbs sugar and I used oil instead of butter. They were very nice and soft. I did 12 larger ones instead of 24 small so they were big enough for sandwiches.
Fruit rolls ADD: 1tsp mix spice,1 tsp cinnamon,1 cup mixed dried fruit.
this made 8 torpedo shaped rolls but i would have preferred them a little smaller. 1/2 white and half wholemeal might have made them a bit lighter.
EDIT re buttermilk: unfortunately none of those sites had it. I can only find it at iherb in the us. It is a good price but postage could be a killer. will look it up.0 -
I was going to ask you about stock sandra! What's the cheapest vegan stock that tesco sell? Do you think marmite is a passable alternative?
Tesco 10 Vegetable Stock Cubes 110G 71p appear to be vegan and cheap, although some of the ingredients are showing as temptext! (the 19p one contains milk, the 19p ones in sainsburys are vegan however!) I always pay a bit more for a low salt version, I don't like using anything where the first ingredient is salt! If they sell them in our local tesco express I will check the ingredients. Marmite (tesco yeast extract) I think would work. Certainly worth a try as its contains extra vitamins including B12 and even though salty, its not the first ingredient. If I make these at the weekend, I will use yeast extract, as I have some out of date that needs using up! I have polenta, not cornmeal, but I don't think it will matter in this recipe.
Well, now you've got me wondering if I've got my calcs right, but it's a combo of the readybrek stuff, the cornmeal and a few other things that meets the 124g I was aiming for (in a 31 day month) it's here if you'd like to check my maths, I'm open to any feedback
Well done, will be interesting to see what you come up with for the meals.I didn't think about the readybrek stuff, as I have ordinary oats, used to eat this tesco stuff, until I realised the real thing tastes far better! Have some in the cupboard though, so if it gets used as a thickener or something else, I can make the recipe.

not much to say, other than Susan's right in that every cornbread recipe I've ever seen has egg in it...I think it would disintegrate into a crumbly mess without a proper binder.
I just did a search for vegan cornbread recipes and there are lots of posts, but mostly the same using soya milk, sometimes egg replacer, vinegar and maple syrup. However I did find a simple recipe that doesn't include these expensive ingredients and if we changed the oil to rapeseed oil there would be omega 3s too.
