    Supermarket and vegan products info.

    Just for info, tesco currantly don't have a list of which of there foods are vegan, but I don't mind reading the ingredients online or looking in my local tesco express and trying to find out for you. My nearest large tesco is 10 miles away.Of course as your sticking to basic fruit, veg, grains etc, we shouldn't have a problem.
    Adsa do produce a vegan list online as uptodate as march 09

    I'm happy to drop into stores too if necessary. I pass at least 1 large MrS, 1 small MrS, 1 MrT express, 1 MrT Metro, 1 5omerfield, 1 small L!dl on my way to/from work everyday. I have an Ald! 10 mins walk away (next to another MrS ;)) and a large L!dl pretty close too. Oh and I'll be in a Mr M and probably a MrT extra at the weekend too! :rotfl: Actually the only big supermarket I don't have access to easily is a MrA! :rotfl: Its a 35-40 min walk each way which is a bit far carrying shopping so I don't go there to often unless I fancy a walk along the river and only light things to buy! :p

    hmmmn will do further research! I'm hoping some kind of oat cake for having at lunches with the tangy bean pate and nut butters will also use up a fair bit of it, and I also wondered about the bread being a kind of oaty enriched loaf?

    Think I need to add more pumpkin seeds to my list....

    A recipe for oat cake and/or oat bread would be nice:D. Me - I'd be making it with my porridge oats (jumbo oats in my case:)) - rather than ReadyBrek. Sorrees - I get why you are using ReadyBrek instead of "proper" oats (that added calcium....) - but in my case ReadyBrek is bleugh! (remembers that from childhood...:().

    So - with a suitable such recipe (with no sugar - or the sugar could be substituted ceridwen-fashion for honey and/or dried fruit) - then I'd be willing to try it and see how it pans out with "proper" oats. I'm hoping jumbo oats that I get anyway would do the trick - but could buy standard "proper" ones to have a go.

    Hmmm....goes off pondering whether oats/jumbo oats could be soaked in advance in any cooking liquid given in the recipe - or, failing that, soaked in water and drained..... (as I can never quite recall why one does that soaking - but gather oats are more easily digested/release more nutrients or summat if pre-soaked - so always soak my morning porridge oats overnight before making my porridge up).

    Well - that title shoulda woken a few people up:D

    Further on the Ready Brek idea. Personally - I'm not happy with the idea of using such a highly-processed food - instead of the "real deal" (ie porridge oats).

    Checking out the Asda site and price-wise:
    Ready Brek = £1.84 for 500gr (ie 36.8p per 100gr)

    and the cheapest porridge oats are:
    Asda S.P. porridge = 58p per kg (5.8p per 100 gr)

    so WAY cheaper....

    In actual fact - I wonder if there are cheaper ways to get the calcium than to pay that extra 31p per 100gr difference between the Asda Oats and Ready Brek? In fact - personally...I would rather adulterate the Oats with a bit of chalk myself (white of course) - than eat Ready Brek. (Thinking - I would imagine that the recent MSE thread on Ready Brek that talks about chalk in the Ready Brek might actually be the case - ie the added calcium in said Ready Brek might well be chalk by some "technical" name).

    Not being a chemist - I couldnt say whether chalk is the actual "calcium" ingredient in Ready Brek or no - but it wouldnt surprise me if it is:(

    I'm also thinking that "proper" oats would be more versatile too - as I find it difficult to envisage cooking oat recipes with Ready Brek. So - I think "proper" oats might turn out to be necessary for things like that oat cake/oat bread and then there's also oat cakes to consider.

    I think post's 2998 and 2999 highlight something important.

    If B&S decide they have £105 rather than £100 and decide to sub something and 'modify' the recipe - like oats for readybreak 'cause they just assume the readybreak was because it's cheap or that you missed oats were cheaper as you aren't infallible - could they be doing harm to themselves? (we know it's the calcium)

    I mean, I know the vit and mins that we are discussing here aren't life threatening one's, the worst they can prob do is decide to cut out the obvious fats to make it more healthy and cheaper (cheese for eg) and then have insufficient protein or fats, but even then, protein starvation takes a couple of weeks to really have an effect and they'll crave protein before then if it's a real problem.

    But, can 'we' (I say 'we' as I'm hopeless at these things) include in the shopping list if the item is to boost calcium, or omega 3, or fibre, and the like? So if they do decide to sub the ingredient then they know what to look for in the replacement.

    I mean, with the rapeseed oil coating on the (carrot cake?), it's easy to see how Shirly might decided to treat them to a can of condensed milk.

    weezl, I've missed something - what did you want me to Recipecal? sorry my brain must not be operating properly this morning...

    also, buttermilk can EASILY be created with milk + lemon juice and leaving for 10 minutes. Or milk + vinegar. It makes baked things dellightfully full and fluffy, so really is a worthy addition to any recipe (try it with scones next time, people, it's beautiful). They do sell it in ASDA/Tesco/Sbury's, but it's obviously pricier than milk.

  • Ready Brek is toddler food not really aimed at adults. It may be very healthy toddler food but I can't see your average B&S + 2 teens being persuaded (and even less so without milk and with various other combinations added.

    Most people are not overly concerned with nutrition and would rather grab a slice of toast or go without rather than faffle around in the morning.

    Part of this challenge is selling this plan to the family and telling them to eat a toddler cereal for their 'health' is not the way to go. But that's just my opinion.

    With Ceridwen I think simple porridge oats is a better option - if you want to buy expensive fortified food you might as well get a bottle of supplements and not worry about the nutritional breakdown other than protein.

    Been a fascinating read so far - many things that I either have not considered when do a menu or it's been in the back of my mind but I have never really researched it...

    Just want to add a few thoughts in before I forget - and I know these have been done already so please forgive me!

    Meat-eating DH.... I have one of these.. he would eat meat 3x/day and lots of it if it was left to him.. he doesn't care about happy animals or organic/homegrown veg (:mad:) so I will be asking him his opinion on the menu as he is probably a "bob" :o However... I am the cook, housewife, holder of household budget and an ex-veggie who would prefer to eat more veggie etc etc so it is tough what he wants(!) But I have 'worked' on him and over the time we have been together, he does eat a more varied diet, he will eat veggie (and moan obviously!) and he has cut out pretty much all of rubbish food he used to eat, I have just adjusted how I cook to accomodate his tastes BUT within reason so I do think most "men" like this can learn to change, it just takes time! But I have been thinking about a friend's situation: her dh and dc are very very fussy and they pretty much only eat meat - a chicken cannot be stretched - she puts out the meal and then they go back and help themselves to more - and it has gone :eek: Most of the meals suggested here, they will not eat and saying "but we only have £x" will not convince them otherwise to try other stuff... I do wonder how they would cope. You will never get the menu to work for everyone and I think helping many has to be the only way to go - I agree with all those comments but it would be nice later on to maybe think about the "awkward" people and how they could be helped?

    Bearing in mind I am only on page 91 and that in the following 60 odd pages, things will have changed - dh will not tolerate eating pilchards - he hates fish with a vengence so that would put him off the menu straight away.

    In order to get a sense of "eating meat", I do do a regular roast chicken (mainly) and I strreeettccchhhhh! For example, we had chicken on sunday with roast pots, carrots, parsnip and cabbage and gravy. I roast the chicken and root veg together with about a cupful of water in the bottom - this water along with the juices is then used with cornflour to make our gravy. We had a breast and a little leg meat between the four of us with loads of veg (and sometimes I do slightly less veg but use leftover crusts of bread to make stuffing with 1 chopped onion, sage, 1 chopped apple and 1 egg). I then stripped the chicken - we had some meat for a biryani and then the rest made a large 6 portion pie (I could have stretched this to 8) with leeks and carrots and a pastry top. The bones then were boiled for stock and this made soup which could be another evening meal with bread (and a pud) or lunches. So effectively I could have got 4 main meals for 4 people (one is an 8 yr old who eats as much as me and one is a 5 yr old who smaller portions but dh has his share(!) ). Is this not a possibility - if you split the meat and freeze so it lasts say 2 weeks or even stretched into 1 chicken meal per week of the month?

    Lidl do chorizo for £1.89-2.89/300g - this can last us over a month - thin slices to top a pizza (I do 500g flour for 1 large pizza or 700g makes 2); an inch finely chopped to add to pasta or frittata for example, I've even added a finely chopped inch to what was a veggie chilli - the chorizo is strongly tasting and adds a real depth of flavour so for a "must have " meat eater this might make them feel they have had meat.

    Suggestions like this I think are worth making in the overall scheme of things so for example this menu will feed 4 of you for £100 but if you have an extra £x then you could do this or this - that make sense? Hope I am not preaching? :o
