Could someone please advise me my brother has a criminal record, Is it possible to fly to New York with a criminal record

The answer to the vague question is, yes it is possible. What you need to be asking, if it is possibly to fly to America on an ESTA with a Criminal Record, and the answer to that is, it depends on the crime he has been convicted of. The ESTA asks questions about crimes of Moral Turpitude, or terrorism.

Random Question Alert: When hotels take your credit card to freeze an amount to cover for incidental charges etc, do you need your PIN?

Going to New York on Thursday and as luck would have it, cannot remember my PIN and I am now panicking that the reminder won't be sent out in time. I was only planning to use my CC for the hotel as they do not accept debit cards.

Don't recall being asked for my PIN much at all, ever, in the USA. Signing is the order of the day.

Never use PIN when using a credit card in the US, always a signature - even though they almost never check the signature. You may be asked for photo ID but typically only for larger purchases.

In fact the custom in the US is not to sign credit and debit cards and use your driving licence for ID as the thinking is that is someone steals your card then they'll also have your signature.

Just to chip in with my 2p's worth - I have been asked for ID when making even relatively small credit card purchases in the US (a pair of trainers from a small outlet shop and some bits and bobs from Target on our last trip in particular come to mind), so if possible it's best to keep something with you just in case.

In New York late July and looking at booking this for us as i've always wanted to do a helicopter tour and some of the other things look good as well. http://www.citysightsny.com/tourpage.php?item=AATLHTBA

Is the helicopter tour worth it? Anybody used the "hop on hop off" buses and have any comments?

Hop on Hop Off buses are slow going. If you want an overview, stay on for a single loop, and ignore the hop off bit. The Subway is the way to go when you want to get places quickly, and much much cheaper.
