    I made choc chip muffins, followed a recipe from BBC, how I wish I had read the reviews first. My results were very similar to the comments. They were flat topped and looked like scones, tasted bland. Oh well if they had been delicious, I may have made more and that's not good for the waistline.

    I went old school today and made two tray bakes. Victoria sponge, strawberry jam, coconut and glace cherries.

    That looks lovely. It was one of my favourite puddings at school, served with pink custard. Obviously it didn't look as good as yours.

    Cake 1 of 4 this coming week. A gluten free, lactose free, chocolate, pistachio, almond and raspberry cake/loaf thing.

    Made Welsh cakes for the first time ever (just bought them before) They turned out really well too! Making a pie for tea shortly too.

    Not at all surprised, it's got a small fat to flour and liquid ratio.

    These days I tend to use the Hummingbird standard for all things cake-y: equal weights of fat:sugar:eggs:flour. Although I do use less sugar and then have some scope for syrup-ing later.

    An added bonus is that the sight if all that sugar puts me off gorging on it, although I can admire your cakes as a thing of beauty :)

    PD - looking fab as usual ;)

    I used up some raspberries that were nearly going over, and made white chocolate and raspberry muffins - first time I,ve baked in a few weeks
    Note to self - STOP SPENDING MONEY !!

    I made some Coffee Cupcakes today, its the first time baking since before christmas i think!!!! I really must get back into it.

    I took your advice vfm4me and looked up a hummingbird recipe and made a cross between a chocolate cup cake and muffin. I had to mix in melted butter in at the end. I was sceptical as the mixture was very runny. But wow, fantastic cakes. Looked just like the picture. Really light and tasty.
    May even make some for work, they are really good.
