  • I made raspberry-lemon muffins with white chocolate yesterday evening as I had to use up some eggs. Since the oven wasn't full with that I packed some apricot-crumble in as well.

    Pixie, it depends a lot on your oven. With my old one it was quite a battle, I had things that needed ways more time and others that turned black from one minute to the next.
    As Happygreen wrote just test the cake with a skewer or knitting needle and decide if it needs more time. I normally put the timer to about 90% of the recomended baking time (for example 45 min when the recipe calls for 50) and check and then just go on in small steps of say 2 minutes for muffins/cupcakes and 5 min for a cake and check again. Sometimes the top of the cake is already quite dark when the cake is still runny inside, so I put tinfoil on top of it to prevent it from burning.

    Tuna sweetcorn and onion quiche with duck eggs which are abundant at the mo, any great ideas for making stuff with eggs (especially that can be frozen) It was Yorkshire puds yesterday !

    This is where a light post-baking syruping might come to the rescue. I would use orange juice with a bit of sugar dissolved as it adds a nice flavour to chocolate chip.

    I make fresh pasta from my duck eggs (I freeze the pastry instead of the pasta for space saving), and pancakes, waffles, quiches, French toast this morning, Greek pie (spinach and feta) tonight. Less baking this season as trying to loose more weight :(

  • This morning myself and dd's made choc chip muffins. Huge batch, so froze half the batter & baked 12.

    Very yummy they are too!

    Once my chicken has cooked I will be baking puff pastry to turn leftovers into a pie, and may knock up a few hot dog sausage rolls with left over pastry - kids love to take them with school sarnies.

    Good morning :whistle: Here's the last couple of charity cakes I've made in the last month. Won't be around much in the next few months... managed to get a part time job baking and selling brownies for my friends small business. Well excited! :D
