This was actually Sunday but thoguht I'd better post it before i forget. I bought some buttermilk going cheap on Sunday and decided to make scones.

    450g self raising flour
    100g cubed butter
    284ml buttermilk
    5ml vanilla essence
    85g sugar

Rub butter into flour, add sugar and stir. Add vanilla to buttermilk and warm gently (I used the microwave on medium for a minute - was lukewarm when it finished). Mix liquid and dry ingredients. bring together and flatten to 3cm deep on floured surface. Cut 6cm rounds and place on floured baking sheet. I got 15 scones out of it, but could have got 18 if the first batch hadn't been 4cm deep.

Bake on gas mark 7 for 12 minutes (less if your oven is like mine and a bit ferocious).

are delicious with jam (and cream if you have it)

  • Will later be making some Easter muffins (with orange, sultanas and cinnamon) topped with lemon icing and mini eggs.

Also marbled chocolate cake ~ all for hubby's work.

K9sandFelines, I'm intrigued by your choc concrete cake! ;)

I hope I'll have time tomorrow for a custard brioche for Easter!

Makin some Easter cupcakes and a huge choc brownie for Sunday pudding.

Might make some more short bread, as they disappeared very quickly.

Will also make rhubarb crumble with a baby one too for MIl as we have a load come up
