St. Patrick's day has just about ended so I though why not some Irish Soda Farls - beautiful !
- 450 g plain flour
- 1 teaspoon salt
- 1 teaspoon bicarbonate of soda
- 300 ml buttermilk
Pre-heat a heavy frying pan. I use a multi-cooker set to No 4
Add the bicarbonate of soda and salt to the flour and sieve into a large bowl.
Make a well shape in the centre of your mixing bowl and pour in half the buttermilk and begin to gently knead the dough add the rest of the buttermilk as you work.
Remove the worked dough onto a floured surface and knead or roll out into a flattened circle. Go for the thickness of a £1 coin. When that’s done cut the dough into quarters (farls).
Next sprinkle a little four over the base of your pan or slow cooker, this helps to stop the farls from burning. Cook for about 8 minutes each side until golden brown. To test if the farl is cook right through give it a top if it sounds hallow your ready to go.
Serve warm with plenty of good Irish creamery butter - beautiful.
You can buy Soda Bread flour and all you have to do is add the buttermilk and a pinch of salt: well worth buying.0 -

I haven't been baking at all for the last couple of weeks due to husband not eating sweet things during lent, but this morning I figured I'd make myself a little treat. Started off making scones, but added various ingredients and ended up with carrot & orange muffin type things which are surprisingly lovely.0

12 little cupcakes (Nigella) and iced them (all at 7.30 this morning) with pink and white buttercream with little sprinkles and hearts for my grownup twin DDs' birthday. (Can't find camera for pic) BUT they don't look quite as lovely as ones you see in pictures - not as high and domed. If anyone makes some and they look good please could you post pic and your recipe ?0
