  • I made a delicious coconut and lime cake for after Mothers day lunch. Had a cream cheese frosting and grated white chocolate on the top. Mmmm.

    Today have made a dozen blueberry and cranberry muffins, a dozen cranberry and white chocolate muffins and a mincemeat tea loaf.

    It must be the day for it because I have made a lemon drizzle cake too :D. I didn't have time to cook it in a loaf tin though, so I put the mix into muffin cases and frosted/iced as usual. WOW they are goooooood :j. Mind you, lemon is my fave so I am biased lol.

  • I too made lemon cake! I cooked mine in a 8" square tin so that it cooked quickly. There are only three of us at home so I don't bake as much as I would like to.

    All this talk of lemon drizzle cake is making my mouth water!!

    Today I made 4 loaves of bread, two types of biscuits, chocolate buns and gingerbread men.

    I'm going to have to google a vegan lemon drizzle cake now!
  • Just made a quiche for dinner tonight, apple and mincemeat pie and orange sponge cake.

    Made the pastry in the food processor- it's so quick and easy, I'll make up double next time and freeze half.

    Thanks for the nudge - I've got some mincemeat which needs using up, and a Bramley apple, so pudding is decided for tonight :D

    Shepherds pie for tea

    Chocolate cake and 2 dozen fruit scones from Be-ro book
    Feeding 6 Adults 1 Teen a 8 year old with hollow legs and a very fussy 5 year old. Also 3 cats and 3 fishies
    To include all Food,Toiletries and Petfood.
